    These are the ingredients necessary to make Keto Stovetop White Mac and Cheese.

    • Low Carb Pasta - This is my favorite low carb pasta because it closely matches the texture of regular pasta.
    • White American Cheese - You can find this in your grocery deli.
    • Extra Sharp White Cheddar - This is a must-use ingredient to balance out the cheese sauce.

    Helpful Hint: 💡: To ensure your cheese melts smoothly into the sauce without clumping, have all your cheeses shredded or diced and at room temperature before adding them to the pan. This helps the cheese melt evenly and integrates beautifully with the creamy base.

    SUBSTITUTIONS

    • Low Carb Pasta - If you can't find the pasta, or just want to lower the carbs even more, you can use steamed or roasted cauliflower florets.
    • Cheeses - If you cannot find the white American and extra sharp cheddar you can use the yellow versions.
    • Pink Salt - I prefer pink salt for all of my recipes for the flavor and added minerals, but you can use regular sea salt or kosher salt.

    • 16 ounces low carb pasta
    • 2 cups heavy whipping cream
    • 1 tsp dried thyme leaves crush them in your palm
    • 1/2 tsp ground white pepper
    • 1/2 tsp mustard powder
    • 1 tsp organic onion powder
    • 1/4 tsp organic garlic powder
    • 1/8 tsp organic ground cayenne pepper
    • 1/8 tsp ground nutmeg or to taste
    • 4 ounces cream cheese at room temperature and cubed
    • 8 ounces white American cheese shredded or diced
    • 8 ounces extra sharp white cheddar shredded
    • 1/2 cup Parmesan cheese grated
    • pink salt to taste

    Instructions
     

    • Bring a large pot of liberally salted water to a boil and cook the pasta according to the package directions. Set aside.
    • Meanwhile, in a medium saute pan over medium-high heat, add the heavy cream, thyme, white pepper, mustard powder, onion powder, garlic powder, cayenne, nutmeg, and cream cheese.
    • Bring to a boil, whisking to combine everything, then reduce to a simmer. Continue to whisk and cook until it begins to thicken, about 5 to 7 minutes.
    • Stir in the American, Cheddar, and Parmesan cheese in small handfuls, waiting for each handful to completely melt before adding more.
    • Taste and add salt if needed.
    • Pour the cheese sauce over the pasta and stir to combine.
