- 2 tbsp Mexican seasoning blend

For serving
- 1 cup Sugar-Free Strawberry Jalapeno Salsa
- Fresh cilantro leaves chopped for garnish

- Place the salmon on a plate or in a casserole dish and drizzle with olive oil.
- Use your hands to spread the oil over the fish so that the whole surface is coated.
- Sprinkle the mexican seasoning blend over both sides of the fish filets.
- Make sure your grill, or grill pan, is free of any food particles and brush it with oil - this ensures the fish will not stick to the grill.
- Preheat the grill, or grill pan, to medium-high heat (about 400 to 450 degrees)
- Place the salmon fillet on the grill skin-side down and cover the grill, leaving the fish untouched for 5 to 6 minutes.
