Sunday Supper is celebrating National Grilled Cheese Month today!
Did you know that April is National Grilled Cheese Month?
Yup, that’s right, an entire month devoted to melted, gooey, cheesy goodness.
Oh, be still my little foodie heart!
I really think there is no other food that stirs as many memories for people as much as grilled cheese (mac and cheese runs a close second I think). So many people refer to grilled cheese as comfort food, and that it takes them back to being a kid. I know
I have SO many memories of grilled cheese and tomato soup dinners.
But when it came to making a grilled cheese sandwich for y’all it was really hard to decide.
I mean there are so many directions you could go with it, and with my ADD that was cause for my head to spin out of control for a few days.
Since I already have Bacon, Apple, and Cheddar Grilled Cheese, little Mini Jalapeno Havarti Grilled Cheese to go with Green Chile Soup, Pesto, Tomato, and Mozzarella Grilled Cheese (which is one of my faves), and even a good ol’ fashioned Patty Melt with TONS of ooey gooey cheese here on the blog, I put it to the fam. I asked them what they wanted to see on a special grilled cheese sammie, and the battle immediately began.
Who knew a war could break out over a grilled cheese sandwich? Holy cow!!
It did eventually calm down when I posed the idea of taking something else that I make, and turning it into a grilled cheese.
That decision was much easier (wish I had known that, to begin with). Everyone has been chomping at the bit for me to make my Slow Cooker Pulled Pork.
It seems that seems to be one of the dishes I always use to ring in spring, and I had yet to make it.
I have to admit that as soon as they suggested a pulled pork grilled cheese my mouth began to water.
How awesome does spicy BBQ pulled pork, topped with melted smoked Gouda, on some nice crunchy toasted French bread sound? Can I get an amen, because this sandwich is heaven!
Of course, when I am making a special dish, and need something to serve alongside, I look to my second favorite family, The Gallo Family!
They have wines for every occasion and that compliment any dish. Some of my favorites are the Hearty Burgundy to go with my fave Italian dishes, Merlot to go with a nice grilled ribeye, Sweet White Blend is my go-to wine for brunch, and their Pinot Noir was the perfect choice for our cedar planked salmon the other night.
But for these babies, I went with the white wine that has captured my heart eerrr palate, their Pinot Grigio. It is a light wine with fabulously bright citrus and crisp apple flavors, and pairs so incredibly well with rich and “tomatoey” dishes.
Tons of cheese and zippy BBQ sauce? Yup, perfect!
Now, about this grilled cheese.
People, you have got to make it! I knew it would be good, but it is ridiculously good!
I topped mine with some pickled red onions and it added that little extra sumpin sumpin that my taste buds really wanted, but they are totally not necessary.
What is necessary is that you got to the store, by these ingredients and a bottle of Gallo Family Vineyards Pinot Grigio, and make your family a grilled cheese sandwich they will remember forever!
BBQ Pulled Pork and Smoked Gouda Grilled Cheese
ingredients:
- 4 cups of Homemade BBQ Pulled Pork (or store bought), warmed
- 8 slices smoked Gouda Cheese
- 8 slices thick cut French bread
- Pickled red onions (optional)
- Bread and butter pickles (optional)
instructions:
How to cook BBQ Pulled Pork and Smoked Gouda Grilled Cheese
- Heat a large cast iron skillet over medium heat. Butter 4 slices of bread and place them butter side down in the skillet. Top with 2 slices of cheese, pickled onions or bread and butter pickles if using, and spread 1 cup of the BBQ pulled pork. Butter the remaining 4 slices of bread and put them on top of the pulled pork.
- Cook until the bread has browned and the cheese is melting. Carefully turn the sandwiches over and cook the other side until golden brown. Remove from the skillet and serve warm. Serve it alongside my spicy coleslaw.

I have had your recipe for slow cooker, Kahlúa pork for years saved on my computer under my favorites tab but now when I click on it, it’s gone. That recipe is my daughter’s all-time favorite. Do you still have it and can you send it to me? I know it’s probably not a keto recipe and that’s okay, I’m just so sad. I can’t find it anymore.
