Nacho Night Nostalgia: Bringing Back the Fun with Keto Tortilla Chips! 🌮🥑
Growing up in Southern California, taco nights were more than just a meal – they were a way of life. From the sizzle of carne asada on the grill to the laughter of friends gathered around the table, each bite was a taste of pure happiness. And at the heart of it all was the crispy, golden nachos piled high with all our favorite toppings.
But when I began living la vida low carb in 2018, those beloved nachos became a distant memory. As I bid farewell to tortillas and embraced a new way of eating, I couldn't help but long for the comfort of those familiar flavors. Fish tacos and chicken burritos have made a triumphant return to my kitchen, but one dish remained elusive – until now.
Enter: Keto Tortilla Chips, the missing piece of the puzzle in my quest to recreate nacho magic. With just three simple ingredients and a few minutes in the kitchen, I've brought back the joy of nacho nights in all their crispy, crunchy glory.
Inspired by the flavors of my favorite taco shop and fueled by a longing for nostalgia, these homemade chips are a game-changer. Whether paired with zesty salsa, creamy guacamole, or piled high with carne asada, cheese, and jalapeños, they capture the essence of taco night – without the carb overload.
So here's to reviving those taco night memories, one chip at a time. As you savor the crunch of each bite, may you be transported back to simpler times filled with laughter, love, and plenty of nachos. Let's make every night a taco night to remember! 💃🎶

Using a pizza cutter or chef's knife, cut into 6 wedges.

🍽Equipment
This is the equipment you will need to make Keto Tortilla Chips.
Storage
Once your chips are fully cooled, store them in an airtight container at room temperature for up to 3-4 days. To maintain their crispiness, you can place a paper towel or a piece of parchment paper at the bottom of the container to absorb any excess moisture.
If you want to keep them for longer, you can also freeze the chips. Place them in a single layer on a baking sheet lined with parchment paper and freeze until solid. Once frozen, transfer them to a freezer-safe bag or container and store for up to 2-3 months. When you're ready to enjoy them, simply reheat them in the oven at a low temperature until they're crispy again.
Whether you're snacking on them solo or using them as a crunchy base for nachos, these keto tortilla chips are sure to be a hit!
💭Top tip
Due to the varying thickness of the tortillas you might use, start checking them after 5 minutes of cooking to make sure they get nice and crispy but do not burn.
