    This recipe is one that I have been meaning to post for a very long time! 
     
    I tinkered and tinkered with it so I could get it just right. 
     
    Why so much work?
     
    Well, I have several picky eaters to please. To top that off, none of them are low-carb, so if I am feeding them something that is keto it had better be damn good or I will get "the look".
     
    You know the "I can't believe you are making me eat this" look? 
     
    Yup, and it looks the same on a 5-year-old face as it does on a 60-year-old face!
     
    The added pressure came from the fact that the Olive Garden was a restaurant that I took my kids to quite frequently when they were young. 
     
    We would have family "date" nights when they did well in school that week. I would let them pick the restaurant they wanted to go to and 9 times out of 10 it was Olive Garden. 
     
    I had a boy that played football and could eat me out of house and home, and a girl that was the pickiest eater on the planet and one of the only things she would eat without complaint was pasta, especially if it was topped with Alfredo sauce (which was graduation from butter and Parmesan cheese, thank goodness!). So all-you-can-eat salad, bread, and pasta was perfect for us!
     
    So when this was done, and being served to the family, I knew there would be a lot of judging going on.
     
    Thank the heavens I nailed it.
     
    I was stressing, let me tell you!

    HOW TO MAKE COPYCAT OLIVE GARDEN ALFREDO SAUCE

    STEP 1

    Heat the butter in a skillet over medium heat. Add the garlic and saute for a minute or two, then add the cream cheese and stir until melted.

     
    STEP 2

    Whisk in the heavy cream and bring it to a bubble.
     
    STEP 3

    Reduce heat and simmer for 5 to 10 minutes, or until sauce coats the back of a spoon.
     
    STEP 4

    Whisk in the parmesan cheese and season with salt, white pepper, and fresh ground nutmeg to taste.
     
    STEP 5

    Serve over zoodles, spaghetti squash, steamed broccoli, or other low carb noodle replacement.

    2 questions I get a lot about this Alfredo sauce are, how do I store it, and can I freeze it, so let me address them now.
     

    HOW TO STORE ALFREDO SAUCE

     
    I like to make this sauce as a meal prep recipe so I have it ready to go when I want a quick and easy meal. To do that I store the sauce in an airtight container in the fridge (if I am planning on using it within the week).
     
    To reheat the sauce just warm it in a saucepan or skillet on the stove. You can reheat in the microwave but do it on the low power setting to keep the sauce from breaking. I heat in short bursts, stir, heat, stir, etc.
     
    Like any other cheese sauce, this Alfredo sauce will thicken as it sits. Even when I am serving it the same night it will thicken up if the Mr. doesn't get his plate as soon as it is ready.
     
    If that happens, or if you need to thin it out as you reheat it on the stove or in the microwave, just whisk in a bit more cream, a little at a time, until you get to the desired consistency.
     
    Make sure to taste and add salt and/or pepper if needed since adding more cream can dilute the seasoning a bit.
     

    CAN I FREEZE ALFREDO SAUCE?

     
    The short answer is yes but, there are a few rules you need to follow.
     
    • Freeze in an airtight container. I use a ziplock bag, lay it on its side, and squeeze all of the air out.
    • Remove from the freezer and place it in the fridge at least 24 hours before you plan to use it.
    • Reheat using the technique outlined above.
    • Make sure to label the container with the date. I wouldn't keep sauce more than a month in the freezer.

    OK, so now we have this delicious Parmesan Cream sauce, what do we serve it with?
     
    Of course, if you are not low carb or keto, pasta would be your go-to choice right? 
     
    But I am here to tell you that my carb-loving guy really enjoys it on SO much more.
     

    TRY KETO ALFREDO SAUCE ON

     
    • Chicken crust or fathead dough pizza
    • Spaghetti squash
    • Zucchini noodles
    • Broccoli florets
    • Grilled or roasted squash of all kinds (I buy bags of the frozen mixed squash).
     
    Then top those with grilled, pan-seared, or roasted chicken, shrimp, or even salmon!
