This Low Carb Copycat Olive Garden Alfredo Sauce recipe is one that I have been meaning to post for a very long time!
I tinkered and tinkered with it so I could get it just right.
Why so much work?
Well, I have several picky eaters to please. To top that off, none of them are low-carb, so if I am feeding them something that is keto it had better be damn good or I will get "the look".
You know the "I can't believe you are making me eat this" look?
Yup, and it looks the same on a 5-year-old face as it does on a 60-year-old face!
The added pressure came from the fact that the Olive Garden was a restaurant that I took my kids to quite frequently when they were young.
We would have family "date" nights when they did well in school that week. I would let them pick the restaurant they wanted to go to and 9 times out of 10 it was Olive Garden.
I had a boy that played football and could eat me out of house and home, and a girl that was the pickiest eater on the planet and one of the only things she would eat without complaint was pasta, especially if it was topped with Alfredo sauce (which was graduation from butter and Parmesan cheese, thank goodness!). So all-you-can-eat salad, bread, and pasta were perfect for us!
So when this was done, and being served to the family, I knew there would be a lot of judging going on.
Thank the heavens I nailed it.

I love this recipe, but the ingredients do not list the amount of cream to use. I use two cups worth and it comes out well.
