How are you doing this fabulous Thursday?
I am coming off of a huge cooking high.
No, I have not been cooking with marijuana *giggle*
I mean that I did so much cooking this weekend, and it made me so happy.
You know I love food, and I love creating new things for y'all, but with my health issues of late I just haven't been able to do as much as I want to.
Which makes this foodie girl very blue 
But I am getting back to my normal self, or as normal as I can be, and tons of ideas have started popping into my head. Those creative juices are flowing like crazy!
I have even been coming up with recipes in my sleep again!

This was one of those midnight manifestations that had me wanting to fire up the grill at 4 in the morning,
Seriously!
I woke up and told Kevin that we needed to grill, like NOW. He just rolled his eyes and went back to sleep.
*Sigh* he never takes me seriously 
But, seeing as how it was raining......and dark......I guess waiting was the right thing to do.
However, as soon as the sun came out I was in the garden picking tomatoes, and getting that grill fired up.
We ended up cooking a Broccoli Pesto Stuffed Grilled Pork Tenderloin (low carb), Korean BBQ ribs, shrimp, and chicken, but the first order of business was the tomatoes for this amazing vinaigrette.
Now, those of you that know me well know that tomatoes used to be on my no way Jose list.
Oh I loved them in things, like spaghetti sauce, salsa, etc.
But to just want the taste of tomato?
That would be a big negative Ghost Rider!
But after my trip to Sacramento with Muir Glen, to follow their organic tomatoes from the vine to the table, I discovered that tomatoes are not such a bad thing.
Now I grow my own, and will eat them right off the vine 
A while back I was watching Food Network and I saw someone making a tomato vinaigrette on one of those cooking competition shows.
My first thought?
YUM!
My second thought?
I can make it even better! I just wasn't sure how, until my nocturnal epiphany!
This is more than just a salad dressing people! It is smoky, tangy, sunshine, with a kiss of smoke, all smooshed together in this lovely bottle of happiness.
To much?
Well, it is really how I feel.
I told Kevin I could drink it with a straw.
I got the "look".
Whatevs
don't rain on my dressing parade babe!
I can't wait to give this a try with chicken? or steak?
Pardon me while I go fire up my grill!!

Grilled Tomato Vinaigrette
Yield: 24 (2 tablespoons) servings
prep time: 10 M cook time: 30 M total time: 40 M
Bring that touch of smoke to this amazing low carb/keto friendly vinaigrette by cooking your tomatoes on the grill.
Ingredients:
- 24 ounces grape or cherry tomatoes
- 3/4 cup extra virgin olive oil + more for grilling
- 2 tablespoons balsamic vinegar
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- Redmond's real salt
- 1/2 teaspoon crushed red pepper
Instructions:
- Place hot coals on one side of your grill (for a gas grill heat one side to medium-high heat).
- Place tomatoes on a grill pan, or line a baking sheet with aluminum foil. Lightly drizzle the tomatoes with extra virgin olive oil.
- Place the tomatoes on the cool side of the grill, close the lid, and cook for 30 minutes, or until the tomatoes begin to burst.
- Place the tomatoes, olive oil, balsamic vinegar, red wine vinegar, garlic, salt, and crushed red pepper into a food processor, and puree until smooth. *
- Adjust seasonings if desired.
- Store in the refrigerator in an airtight container for up to 2 weeks.
NOTES:
You can strain the vinaigrette through a mesh strainer if you want to remove the seeds.
