    The story behind these bars is pretty sweet (pun intended). My kids asked me to bring a dessert for our Fourth of July BBQ, and I knew I had to come up with something that would impress both keto and non-keto folks. I love a challenge, and proving that a keto lifestyle doesn't mean missing out on mouthwatering treats is my jam. So, I got to work and created these Keto Cherry Pie Bars, and let me tell you, they were a hit!

    I wanted a dessert that was as festive as the Fourth of July fireworks, and these bars did not disappoint. They have a luscious keto cherry pie filling that's to die for and a crumbly, buttery crust that’s out of this world. Plus, the recipe is flexible! When I’m making these at home, I use heavy cream for that extra richness, but I originally made them dairy-free just in case anyone at the BBQ needed it.     These are the ingredients necessary to make Keto Cherry Pie Bars.

    🔪Keto Cherry Pie Bars Instructions

    This is a basic breakdown of the steps involved in making Keto Cherry Pie Bars. You will find the full directions in the recipe card at the bottom of the post.

    Spread 3 cups of the batter evenly into the prepared pan.

    Once the cherry bars are completely cooled, drizzle the glaze over them.

    Helpful Hint: 💡: When spreading the cherry pie filling over the batter, use a spoon to gently dollop the filling across the batter's surface. This makes it easier to spread without disturbing the bottom layer. For a perfectly smooth spread, you can slightly warm the filling before applying it.

    2. Enjoy: Once thawed, the bars can be enjoyed cold or brought to room temperature before serving. If you prefer a warm treat, you can gently heat them in the microwave for about 15-20 seconds.

    • 2 cups Besti Monk fruit and Allulose Sweetener
    • 4 eggs
    • 1 tsp real vanilla extract
    • 3 cups King Arthur's keto wheat flour
    • 1 tsp pink salt
    • 3 cups sugar-free cherry pie filling

    For the glaze

    • 1 cup Besti Monk Fruit and Allulose Powdered Sweetener
    • 2 tbsp heavy cream or coconut, or almond milk
    • 1/2 tsp real vanilla extract

    • In the bowl of a stand mixer, or a large bowl, cream together the butter and sugar until light and fluffy.
    • Beat in the eggs, one at a time, then stir in the vanilla.
    • In a separate bowl, whisk together the keto flour and salt.
    • Gradually add the dry ingredients to the creamed mixture and mix well.
    • Spread 3 cups of the batter evenly into the prepared pan.
    • Carefully spread the sugar-free cherry pie filling over the batter.
    • Drop the remaining batter in small clumps over the filling.
    • Bake for 35-40 minutes or until golden brown.
    • Cool completely on a wire rack.

    To make the glaze

    • In a small bowl, whisk together powdered sweetener, heavy cream (or dairy-free alternative), and vanilla extract until smooth.
    • Once the cherry bars are completely cooled, drizzle the glaze over them.
    • Cut into bars and serve after the glaze has set.
