Keto Blueberry French Toast Bake | Mini Keto Pancake Bites
I love breakfast foods, especially pancakes. They remind me of my Grandma. She used to make me and my cousins pancakes during the holidays when we were little.
So when I saw the regular version of these pancakes on Pinterest, something just clicked in my brain and I thought of her and knew I had to come up with a low carb and gluten-free version of them for us to enjoy.
I tried to incorporate the swirls into the pancakes like the regular version but the swirls just didn't stay clean and pretty so, for pictures, I opted to swirl the cinnamon sugar onto the cooked pancakes along with the cream cheese frosting.
If you want to have the cinnamon sugar in the pancake batter just cook one side of the pancake and right before you are going to flip it swirl the cinnamon sugar mixture onto the uncooked side, give it a minute, and carefully flip it.
These pancakes have quickly become a holiday favorite with my friends and family, and for good reason. If you aren't eating cinnamon rolls disguised as pancakes for the holidays what are you doing with your life?

INGREDIENTS
- unsalted butter
- Besti Monk Fruit and Allulose Brown Sweetener
- ground cinnamon
- cream cheese
- Besti Monk Fruit and Allulose Powdered Sweetener
- pure vanilla extract
- Wholesome Yum superfine almond flour
- eggs
- Besti Monk Fruit and Allulose Crystalized Sweetener
- gluten-free baking powder
HOW TO MAKE KETO CINNAMON ROLL PANCAKES

For the cinnamon filling
STEP 1
In a small bowl, combine the butter, brown sweetener, and cinnamon. Then place it in a small zip-top bag or piping bag. Snip a small corner off when ready to pipe the filling onto the pancakes.
For the cream cheese glaze
STEP 2
Combine the cream cheese and butter in a small bowl. Melt in the microwave for 30 seconds. Whisk until smooth. Add in the vanilla and powdered sweetener. Add a Tablespoon of almond milk (or other low carb milk) if you need to thin it out, or more powdered sugar to thicken it.
For the pancakes
STEP 3
Combine all of the pancake ingredients in a blender and blend for 2 to 3 minutes. This helps to create fluffier pancakes.
STEP 4
Heat butter in a skillet over medium-low heat. When it begins to bubble pour 1/4 cup of the batter into the skillet.
STEP 5
When the edges set, and the center begins to bubble, about 2 to 3 minutes, turn the pancake over and continue to cook the other side for an additional minute or so. *SEE NOTES
STEP 6
Remove the pancake from the skillet and continue on with the remainder of the batter.
STEP 7
Snip the tips of the zip-top bags of cinnamon sugar sauce and cream cheese glaze then drizzle the pancakes with each.
FAQS ABOUT KETO CINNAMON ROLL PANCAKES
My Keto Cinnamon Roll Pancakes burned, what am I doing wrong?
All stoves are not the same - This just means that you need to test out a small amount of the batter to see what temp you should cook your pancakes on. I will say that, on my stove, medium-low heat is perfect. Since these are low carb pancakes they tend to burn easier than a traditional wheat flour pancake. But medium on your stove might work perfectly.
I had trouble flipping my Keto Cinnamon Roll Pancakes.
These pancakes are a bit more fragile than your traditional pancake because there is no gluten to help hold them together. I use a 1/4 measuring cup to scoop the batter so they are all the same size.
Can I freeze these Keto Cinnamon Roll Pancakes?
If you want to make them ahead of time to make things easier on the morning you are serving them I would suggest incorporating the cinnamon sugar into the pancake (see my notes) and freezing them. Make sure the pancakes are completely cooled, then separate them with waxed or parchment paper to keep them from sticking together. I use these reusable quart-sized zipper-top bags or these meal prep containers.
When you want to eat them you can either place them in the fridge the night before or just pop them straight from the freezer into the microwave. If heating from frozen use the frozen food setting. I wrap them in a paper towel as well.
I have seen some bloggers talk about using the toaster to reheat but I haven't tried that. If you do please make sure to leave me a comment below to let me know how it works!

This is one of those recipes that I like to call a "fake-out" because people think it is a big deal when you serve it but you know it really wasn't hard to make at all. I love those recipes!
