    This Keto White Chocolate Macadamia Nut Cookies recipe is a must-make!

    It has been a while since I brought you a cookie recipe. But this one has been on my list for quite some time.

    Chocolate and macadamia are two of my favorite things in a dessert. I know white chocolate is kind of a classic with macadamia nuts in a cookie, but I really love any kind of chocolate with macadamia nuts. When I was a kid my grandmother would always order me the milk chocolate macadamia nut clusters from Hawaii for Christmas and I looked forward to that all year long!

    These cookies use my regular Keto Chocolate Chip Cookie recipe, swaps out the regular chocolate chips for white chocolate, and add some chopped macadamia nuts. So you can see how easy it is to take a basic recipe and make it your own by adding your favorite ingredients.

    Like milk chocolate and walnuts? Go for it!

    Another good one is white chocolate and pistachio!

    These cookies really are super simple, and ready fast. I tend to make a double batch too because my non-keto family and friends love them so they go quickly!

    Just make sure to let them rest after baking because they are super fragile right out of the oven so they need that 10 minutes to firm up a bit and not crumble when you pick them up.

    Because these cookies are so quick and easy to make, this is my go-to recipe when I get that cookie craving.

    It is funny that, before I went keto, I wasn't really what I would call much of a baker. Then I go keto and BAM I am in the kitchen coming up with tons of baking recipes.

    Maybe it is the carb cravings that spurred me on. I am not sure. But all I know is I am so happy that I did it. I love having a low carb treat I can grab when those cravings hit.

    The funny thing is that I don't need much to satisfy that craving. Before I went low carb I could put away some cookies! It wasn't uncommon for me to grab a fistful of Oreos.

    Now just one or two cookies are enough.

    🔪Instructions

    This is a basic breakdown of the steps involved in making Keto White Chocolate Macadamia Nut Cookies. You will find the full directions in the recipe card at the bottom of the post.

    Almond flour, powdered sweetener, pink salt, and baking soda in a glass bowl.

    Sift dry ingredients into a large bowl and whisk together well.

    Adding melted, butter, vanilla, and heavy cream to the dry ingredients in a glass bowl.

    Add melted, butter, vanilla, and 2 tablespoons of heavy cream to the dry ingredients and combine.

    Stirring in chocolate chips and macadamia nuts to the cookie batter.

    Using a medium (1.5 tablespoons) cookie dough scoop, drop dough balls onto a parchment-lined baking sheet. Carefully press the balls down to flatten.

    FAQ about Keto White Chocolate Macadamia Nut Cookies

    I have a nut allergy, can I leave out the macadamia nuts and use coconut flour?

    Unfortunately, you can not substitute coconut flour for almond flout 1:1. Coconut flour absorbs much more moisture than almond flour so it requires you to use less flour or add more liquid. I have not tested out a coconut flour version.

    Can I make this dough and freeze it?

    Yes, I have prepared the cookies all the way up to baking them. Place them on a parchment paper-lined baking sheet and freeze them. Then place the frozen cookies in an airtight container or ziptop bag. When you are ready to bake allow them to thaw overnight in the fridge. Then bake the next day. I have never tried to bake them from frozen so am not sure if it would work or how long you would bake them.

    Do I need to store the Keto White Chocolate Macadamia Nut Cookies in the refrigerator?

    Nope, you can just put them in an airtight container and keep them on the counter.

    • 2 cups Wholesome Yum Superfine Almond Flour
    • 1/2 cup ChocZero sugar-free white chocolate chips
    • 1/2 cup macadamia nuts chopped
    • 1/4 cup Besti Monk Fruit and Allulose Powdered Sweetener
    • 1/2 tsp pink salt
    • 1/4 tsp baking soda
    • 1/4 cup unsalted butter melted
    • 2 tsp real vanilla extract
    • 1/4 cup heavy cream

    Instructions
     

    • Preheat oven to 325 degrees F.
    • Sift dry ingredients into a large bowl and whisk together well.
    • Add melted, butter, vanilla, and 2 tablespoons heavy cream to the dry ingredients and combine. Continue to add heavy cream until the dough comes together.
    • Stir in the chocolate chips and macadamia nuts.
    • Using a medium (1.5 tablespoons) cookie dough scoop, drop dough balls onto a parchment-lined baking sheet. Carefully press the balls down to flatten.
    • Bake for 12 to 15 minutes.
    • Remove from the oven and allow to cool for at least 10 minutes. Cookies will be very fragile while they are hot.
