Well, the countdown to Christmas is on my friends and I am all about the cookies right now.
I have had a sweet tooth that I cannot deny. It is like I have that fuzzy blue dude in my head screaming COOOOOOOOKIE 24/7.
Ya, it is that bad!
And with the crazy year that we have had, I have decided that I am going to indulge that little dude as much as possible.
I mean, if I can't do all of the other things I want to do right now, I can at least bake a butt load of cookies, right?
Of course, I am right ?
So there has been a never-ending parade of Keto Snowball Cookies, Low Carb Chocolate Chip Cookies, Keto Double Chocolate Chip Cookies, and yes even these Low Carb Pumpkin Chocolate Chip Cookies because I am not ready to give up on pumpkin just yet.
INGREDIENTS NEEDED FOR KETO SUGAR COOKIE BARS
- Almond flour
- Coconut flour
- Baking powder
- Sea salt
- Butter
- Granulated sweetener
- Eggs
- Vanilla extract
- Powdered sweetener
- Heavy cream
- Food coloring
I know this technically is not a "cookie" but are we really going to be that picky when consuming sweets?
I know I'm not!
I found the original recipe when I did my big deep dive on the ol' interwebs looking for keto cookie recipes on one of my all-time fave keto blogs All Day I Dream About Food. If you haven't checked out Carolyn yet, you have got to.
She makes some of the most delicious food, savory and sweet!
I thought these sugar cookie bars looked and sounded amazeballs, and like something I could definitely make. I had to tweak the recipe just a bit to fit the items I had in my pantry, but it worked perfectly and has now landed on my must-make Christmas cookie list as requested by pretty much everyone in the whole family.
So what does that tell you?
One of the things I really liked about this whole cookie bar dealio what that there was no rolling, and cutting involved.
I do so love the cute cutout and decorated Christmas cookies, but just dread the time, work, and cleanup that that whole situation requires.
Plus, my blog didn't get the name "Kozy Kitchen" for nothin' y'all.
I mean, my kitchen is so damn small you need to go outside to change your mind!
So finding enough room to have everything spread out AND have enough room to roll out cookies and decorate?
ya, no, that's not happening.
Now, when it comes to decorating the cookies make sure to let your bars cool completely.
I am sure I don't have to tell you that, I am more so saying that to beat it into my own brain because the first time I made these I couldn't wait.
I thought they were cool enough and started frosting away only to have the frosting turn to goo and I ended up with a gloppy mess.
?
Why was I not blessed with patience?
At least it was a tasty gloppy mess, right?
So don't be like me, let those cookie bars cool!!
Here is where you can have fun.
You can just go with a straight forward approach and frost with one color and have at them.
Frost with one color, then drizzle with another. Or go for the cuteness factor, like these, and take the time to make the Christmas lights.
I know the cuter they are it makes them harder to eat, but that is only you that feels that way.
Trust me, the rest of the family will be hovering over your shoulder waiting to dig right in!
So, I am just curious.
How many types of cookies do you make at Christmastime?
I have had years that I have been relatively calm and only made maybe 4?
Then there have been years that I went completely crazy and made about 12 to 15!!
I know there should be a happy medium in there somewhere right?
This year has been a big year, but that is because I was testing out a LOT of recipes for y'all. Not all of them made them on to the blog before Christmas, but I will be getting them on for ya over the coming months, I promise.
Christmas isn't the only time of year we get to enjoy a good cookie right?

What are your favorite holiday movies?
This year I broke down and started watching the Hallmark channel.
I know, don't groan.
The Mr is already groaning enough for you, trust me ?
But I have to admit that a little bit of cheese is just what 2020 ordered, at least in my book, and I have actually been enjoying quite a few of the movies I have seen.
Is that bad? Please don't say it is!
Now, they will never replace my Christmas faves like National Lampoon's Christmas Vacation, It's a Wonderful Life, A Christmas Carol, Christmas with the Kranks, Miracle on 34th Street, The Santa Clause, The Grinch, etc...
But they have been a nice distraction.

Keto Sugar Cookie Bars

These keto sugar cookie bars are a low carb, gluten-free, and sugar-free version of a classic holiday treat the whole family will love.
Ingredients
For the Bars
- 4 cups superfine almond flour
- 1/4 cup coconut flour
- 1 teaspoon gluten-free baking powder
- 1/2 teaspoon sea salt
- 3/4 cups butter, softened
- 1 cup granulated sweetener
- 3 large eggs
- 1 teaspoon pure vanilla extract
For the Frosting
- 6 tablespoons butter, softened
- 1 cup powdered sweetener
- 3 to 5 tablespoons heavy cream
- 1/2 teaspoon pure vanilla extract
- Food coloring as desired
Instructions
For the Bars
- Preheat oven to 325 degrees F.
- Spray an 8 x 8" pan with coconut oil (or butter it), and line the bottom with parchment paper.
- In a medium bowl, whisk together almond flour, coconut flour, baking powder, and salt.
- In a large bowl, beat butter and erythritol until creamy. Beat in the eggs and vanilla extract, and then add in almond flour mixture, beating until the dough comes together.
- Press dough firmly into prepared pan.
- Bake 30 minutes, until just golden brown around the edges and slightly more firm to the touch. Remove and let cool in the pan.
For the Frosting
- Beat together butter and powdered erythritol.
- Add cream, 1 tablespoon at a time, until desired consistency is achieved. Stir in vanilla and food coloring.
- Spread or pipe onto cooled bars.
