Like, I don't miss mashed potatoes EVER, love them!!
I mean, y'all know I love me some cauliflower.
Things like these Low-Carb Cheesy Cauliflower Hash Browns, Deviled Egg Cauliflower Salad, and Coconut Lime Cauliflower Rice make appearances on the table quite often in our house.
But my family feels the same way, and they aren't even low carb!
They have gone along with this whole keto dealio strictly because I am the one cooking the food and they like to eat.
Oh, don't get me wrong, they always voice their honest opinions on what I make, and usually they are a thumbs up. They will tell me that they enjoyed it but they might still harbor a desire for the carby version of the dish.
This one on the other hand? Not so much!
They ALL look forward to it.

My secret weapon in this recipe?
Well, there are a couple really in my mind, but the #1 most important one is the roasted garlic.
OhhEmmGee it adds SO much flavor!
Yes, it takes a little bit of time, but it is hands-off time and sooooo worth it!
The second thing is a bit of cream cheese.
Oh ya, how can you go wrong with a bit of creamy goodness?

WHAT YOU NEED TO MAKE THIS MASHED CAULIFLOWER
- Cauliflower
- Garlic
- Cream cheese
- Unsalted butter
- Heavy cream
- Salt
- Fresh cracked black pepper
- Chives
Let me just start off by addressing the elephant in the room right off the bat.
I know it is cauliflower.
No, it is not potatoes.
Yes, I swear it is JUST as good ??
Actually, I think it is better!!
Why?
Well, if you take out the reason that most people turn their nose up at cauliflower, the funky smell.
Am, I right?
Cauliflower is just like potatoes.
Just a blank canvas for whatever flavor you want to add to it.
Now add roasted garlic and some cream cheese?
OhhEmmGeeee yes please!
Plus, this freezes B E A UUUUUUU TIFULLY.
Anyone that has ever stored leftover mashed potatoes knows they lump, clump, and are a real pain in the rear to reheat and eat.
This mashed cauliflower stores in the fridge, or the freezer perfectly.
Even though I only cook for two, I always make a full batch of this recipe and then freeze it in these containers. When it is time to reheat, I just remove the lid and microwave for 5 minutes, stir, and then heat an additional minute or two if needed.
Perfect for a quick and easy side for dinner during the week!
So, this is a MUST make for your holiday meal!
It is easy, delicious, and honestly, if you don't tell them, they won't know!

Roasted Garlic Mashed Cauliflower

This Roasted Garlic Mashed Cauliflower recipe will quickly become a low carb dinner staple! It is deliciously buttery and creamy and that roasted garlic flavor takes it over the top!
Ingredients
- 2 medium heads of cauliflower, cut into florets
- 1 large head of garlic, roasted
- 4 ounces cream cheese, cubed
- 1 stick of unsalted butter, cubed
- 1/2 cup heavy cream
- Salt
- Fresh cracked black pepper
- Fresh chopped chives, optional
Instructions
- Place cauliflower florets in a large pot of salted water. Bring to a boil and cook for about 7 minutes, or until fork-tender.
- Drain cauliflower well.
- Place the remaining ingredients in a food processor (can do in batches) and process until smooth.
- Taste and add salt and pepper as needed.
- Top mashed cauliflower with a pat of butter and chopped chives.
