Mexican Cauliflower Rice | Keto Cajun Dirty Rice
One of the things I missed most when I discovered that my body didn't like rice anymore was Chinese take-out.
I was a fried rice lover through and through. Chicken, pork, shrimp? Yup I loved them all. There was even a place that made a "Royal Rice" that had all three in one friend rice!
OMG heaven!!
But, instead of pouting I decided to jump on the cauli-rice craze (this is an old recipe) and figure out how to make my favorite take-out dish at home.
The first fried rice recipe I came up with was a shrimp fried rice with bacon for my hubby. Yes, he is spoiled. I always work on his recipes before mine.
Ince I knew that was a hit I decided to branch out but, it was right after the holidays so we had a ton of leftover ham. I decided to kill two birds with one stone and that is where this recipe came from.
INGREDIENTS NEEDED TO MAKE HAM FRIED CAULIFLOWER RICE

INGREDIENTS
- cauliflower
- Tamari or coconut aminos
- rice wine
- toasted sesame oil
- Besti Monk Fruit and Allulose Sweetener
- olive or avocado oil
- eggs
- ham
- frozen peas and carrot mix
- green onions
- Toasted sesame seeds
HOW TO MAKE HAM FRIED CAULIFLOWER RICE

STEP 1
Place the cauliflower florets in a food processor and pulse until the cauliflower becomes the size of grains of rice. Alternatively, grate the cauliflower on the large hole side of a box or hand-held grater. Set aside
STEP 2
Combine fish sauce, soy sauce, rice wine, sesame oil, and sugar in a small bowl and set the sauce aside.
STEP 3
Heat a wok or a 12? nonstick skillet over medium heat until hot. Add 1 tablespoon oil and swirl to coat the cooking surface. When oil is hot, add the eggs and stir quickly to scramble until eggs are medium, about 1 1/2 to 2 minutes. Transfer eggs to a plate and break them into small pieces.
STEP 4
Wipe out the wok or skillet with a dry towel. Add 2 tablespoons of oil and swirl to coat the cooking surface. Add ham and stir-fry for 1 to 2 minutes. Transfer ham to a plate and return the wok or skillet to the heat.
STEP 5
Add the remaining 2 tablespoons of oil to the pan, swirl to coat, and add the cauliflower rice, using a spatula to spread it into an even layer. Cook rice for 3 to 4 minutes, stirring every minute. Add the peas and carrots and sauce and stir-fry until the cauliflower rice is tender-crisp and the peas and carrots are hot about 2 minutes.
STEP 6
Mix in reserved eggs, ham, and green onions and cook for an additional minute.

Serve topped with green onions and toasted sesame seeds
FAQS ABOUT HAM FRIED CAULIFLOWER RICE
I am strict keto so I don't want to use the peas and carrots, what can I use instead?
The peas and carrots don't raise the carb count very much, but if you are strict keto for other reason you can always sub in things like bell pepper, celery, broccoli, or even green beans. Your cooking time will vary a bit depending on what veggies you use. Just cook them until they are crisp tender and you will be good to go!
How long does leftover Ham Fried Cauliflower Rice keep in the refrigerator?
If you store it in an airtight container it should keep for up to 5 days.
How should I reheat my leftovers?
The best way to reheat your cauliflower fried rice is in a skillet, or a wok, over medium heat with a small amount of olive or avocado oil. Make sure the pan hot before you add the cauliflower fried rice. Sauté, stirring often, until just heated through. It will only take a couple of minutes.

Looking for the soy sauce, fish sauce and sugar called for in step 2 on the ingredient list and wondering where the Tamari and monk fruit called for in the ingredient list is supposed to go. Crossing my fingers this turns out.
