Salsa Fresca (Restaurant Style Salsa) – Fresh restaurant style salsa at home in a matter of minutes!
Happy almost Friday gang! I am in a super good mood today!! Why you ask? Well I will gladly tell you…..my granddaughter was born this past Monday. Yes, I am officially Nana B and I am over the moon happy, excited, emotional, oh you know, all of that giddy, goofy, mushy stuff. All of a sudden I am one of those grandparents that can’t get enough pictures. My Facebook, my phone, and as soon as I can get them printed out my walls, are/will be covered with photos of the most precious baby I have ever held in my arms, aside from my kids (nice save there Mom, right?! Seriously, I can’t get enough of this kid! OK, I will gather myself and chat about other things now, like this fabulous salsa.
I love to use fresh produce as much as possible. And I am not talking just the fact that I bought it in the produce department of the grocery store. I am talking about seasonal, raised in my garden, or bought at a farmer’s market kind of produce. You know, the kind that tastes amazing, like it is supposed to taste? Ya, that stuff.
We are starting to get fresh vine ripened tomatoes here and that is really the only kind I like to eat raw, otherwise I want them cooked. But when they are fresh off the vine OhhEmmGeeee! I cram them into just about everything I can. Breakfast, lunch, and dinner. Which, if you knew my back story, I nevvvvvvvvvvver used to do. Oh boy did I hate tomatoes. BLECK, get them away from my face.
Long story short, Mom was mad that I wouldn’t eat tomatoes, she force fed me a cherry tomato, it didn’t stay down, nuff said.
So I am sure you can understand my years off tomato aversion right?
But not anymore. I have no idea what happened. I just kinda woke up one day, after I started food blogging, and told myself that I was missing out on a ton of great food because I wouldn’t eat a raw tomato. And that was all it took. I started buying tomatoes like crazy. Of course I soon learned that all tomatoes are not created equal, and fresh vine ripened tomatoes were the king of all tomatoes.

Anywhoo, I spied some juicy babies and had to grab them and make on of my favorite things to make with fresh tomatoes, salsaaaaaaa. Ya baby! Fresh salsa with eggs? My fave breakfast evahh!
What surprises me is that not a lot of people I know make their own. Oh they love it, but buy it at the store. Nay nay my dear friends. Do NOT do that when you can make this fresh yummy salsa in a matter of minutes in your own kitchen.
No, you do not add deer to the salsa. I just thought you would like to see what the sound of my food processor whizzing away drew into the yard. I guess he liked the idea of fresh salsa too!
Luckily Kevin came home from work just in time to help me with my photos. Now that I have had him help in a few of them he is asking if he is going to get paid. Haha yes…..in food! Which, btw, he ate quite a bit of and then proceeded to pack some to take to lunch and share with his coworkers.
But I am outie now, I am drooling over the salsa and want my breakfast. Eggs and Salsa Fresca…..YUM!!
Fresh restaurant style salsa at home in a matter of minutes!
6 vine ripened tomatoes, quartered
1 white onion, diced
4 jalapenos, seeded and rough chopped (I seeded 1/2 of them for spicier salsa)
1 cup cilantro leaves (a good handful)
4 cloves garlic, chopped
2 limes, juiced
1 tablespoon agave nectar
Kosher salt to taste
Combine 1/2 of the tomatoes, white onion, jalapenos, cilantro, and garlic together in a food processor, pulse until well combined. Seed the remaining tomatoes, and add them to the processor. Pulse until they are broken down into big chunks, then add the cilantro, lime juice, agave, and salt. Pulse until just combined. Taste and adjust salt as needed.
Refrigerate in an airtight container. Flavors will develop the longer the salsa sits.
