I have been living the low carb life for a little over a year now.
To be honest, I started out planning to go strictly keto but, due to breaking my ankle and the Mr. having to prepare meals for several months, I decided to just focus on eating low carb.
If you are confused about the difference between keto and low carb, I will be doing a post on that next week. I know it was rough for me to navigate the road between the two. So hopefully I can share a bit of what I have learned to help you on your journey.

When I first started I focused in on what I was going to be missing out on.

Pasta

Pasta was my jam!
I could, and did, make just about everything into a mac and cheese!
Salads have become my go-to lunch yummy.
But, after a while, ranch and Caesar salad dressing got pretty boring.
Don't get me wrong, I love them both, but a girl needs some variety, right?
I knew I needed to put my thinking cap on to come up with some new tasty ideas that would please the carb lovers as well as myself and came up with recipes like these;

So many store-bought salad dressings contain a ton of carbs.
But making your own homemade salad dressing is so easy!
Recipes like this Green Goddess Dressing, Thousand Island Dressing, and Creamy Balsamic Dressing, prove just that.
They are all low carb, easy to make, and super yummy!
I now have at least 2 or 3 different low carb salad dressings in my fridge at all time for easy meals on the fly.
Toss some greens with a couple low carb veggies, a protein (some of my faves are leftover steak, pan seared chicken, and even canned salmon), and a delicious homemade low carb salad dressing like this Creamy Low-Carb Lemon Vinaigrette.

Creamy Low-Carb Lemon Vinaigrette
Yield: 18 (tablespoon) servings

Light and bright, this creamy salad dressing recipe is the perfect dressing for your low carb lifestyle!
ingredients:
- Zest of 2 lemons
- 4 tablespoons (2 large lemons) of lemon juice
- 1 clove garlic, minced or grated
- 3 tablespoons white wine vinegar
- 3 tablespoons zero-carb mayo
- 1 teaspoon Dijon mustard
- 1/3 cup olive oil
- 1 tablespoon fresh thyme
- 3/4 teaspoons salt
- 1/4 teaspoon pepper
instructions:
How to cook Creamy Low-Carb Lemon Vinaigrette
- Add all ingredients to a small mason jar and shake until smooth and creamy. Adjust seasoning to taste.
