I know that it is time to start thinking about back-to-school and easy weeknight meals, but the weather here is still amazing!
We have had temps in the '70s to '80s and are actually getting ready for a BBQ this weekend to celebrate my birthday.
My brain is still swimming with ideas related to grilling, and rubs and seasoning blends, of course, fit right into that category.
BUT
Seasoning blends are also great for meal planning and prepping (stay tuned for a post on that soon), so I kinda feel like I am killing two birds with one stone here.
One of the things that I found when I went low carb was that seasoning can be a killer with hidden carbs.
You would think that a dry seasoning would just add flavor, but DAYUM, it can have SO many carbs!!
A lot of that will come from sugar, which I have been finding in E V E R Y T H I N G lately, but even garlic powder and onion powder can have quite a few, depending on the brand.
Fresh garlic and onions can also contain quite a few, so I always try to balance the desired carbs with the craving for fresh.
That one can be quite a problem for me because once I lost 160 pounds 15 years ago, I went hardcore, "Everything must be fresh." However, once I realized that powdered spices, again depending on the brand, are just dehydrated versions of the fresh ingredient, I became much more comfortable using them.
This Homemade Tandoori Seasoning Blend Recipe has just a little over 2 grams of net carbs per tablespoon (which is one serving/what I use for a chicken breast, or a pork chop, or a couple chicken thighs) and I am happy with that.
I try to keep my rubs and spice blends at that or less.
The bonus is that you don't sacrifice one bit of flavor.
Once you get the hang of that, the sky is the limit.
I was seriously so worried when I started this journey.
Worried that my food would end up being boring or bland.
I worried that Kevin would not enjoy the dishes I made that were keto or low-carb.
But I was so wrong to worry.
I made this for him, and after just one bite, his reaction was, "Wow, this is really good. It has a lot of flavor."
Yes!!

Absolutely awesome spice recipe. Tossed chicken breast pieces in this, as well as plain yogurt and then baked. Served with a yogurt/mayo sauce. ??
