Can you believe it is the end of May already????
I mean like, we blinked and half of the year is gone!
It is crazzzzzzy!
You would think, with my broken ankle, that the year would have just dragged by because I really just can't do the things I am used to doing.
Just going to the grocery store can be a pain in the umm ankle.
The other day I had several days worth of meals and blog post groceries to buy so I had to enlist the reluctant help of the Mr.
He hates grocery shopping with a passion and will avoid it at all costs. But, with the laundry list of items I had, he knew he had no choice.
Not a happy camper!
BUT
The upside was that he got to see all of the chicken, and pork, and beef that we will be grilling this upcoming week.
THAT made him smile.
He is a huge fan of my homemade rubs and BBQ sauces.
So when I decided to go low carb he was worried that all of that was gone.
Does he not know me??
First of all, just because I am low carb, doesn't mean he can't enjoy and, second of all, surely he knows me well enough to know that I am not going to miss out on any BBQ goodness!
I have been working away at coming up with low carb versions of our favorite BKK rubs and sauces.
In fact this weekend we are smoking 2 whole chickens and using my Alabama White BBQ Sauce on one, and my new Low Carb Blueberry BBQ Sauce on the other.
Mini Me and her guy will be here as guinea pigs errrrrr taste testers, so if all goes well that BBQ sauce recipe will be making an appearance here on the blog next week!

This dry rub was the first rub I posted here on the blog.
I called it my Basic BBQ Rub.
I have since been informed that "basic" is not a good thing in today's lingo ?
So that is why that word was not used in the name of this recipe!
But I will tell you that this is the rub that we keep on hand all of the time for all of our BBQ needs.
Pork, chicken, and even beef brisket have all started off their happy journey to the grill rubbed in this deliciousness!
So for that reason, I had to get a low carb and keto friendly version of it going.
I was not going to miss out on one morsel of all of that good stuff!
Luckily I had everything that I needed in my pantry, so this was a recipe I could whip together in no time flat.

The good news was that Kevin didn't even realize that I had converted this rub to low carb!
Yield: 50 (1 tablespoon) servings
Low Carb Barbecue Dry Rub
Being keto doesn't mean you can't enjoy delicious BBQ. Most store bought rubs are high in sugar but this rub recipe has only .36 net carbs per serving!!

ingredients:
- 1 cup Besti brown sweetener
- 1 cup Besti Monk Fruit and Allulose granulated sweetener
- 1/2 cup pink sea salt
- 1/4 cup cracked black pepper
- 1/4 cup smoked paprika
- 2 tablespoon cayenne pepper
instructions:
How to cook Low Carb Barbecue Dry Rub
- Combine all of the ingredients well.
- Store in an airtight container.
