    Oh, Easter is almost here and I am excited!
     
    It is the holiday of ham and sweets for me. Two of my favorite things. Seriously, I can go ham on some ham ?
     
    But, since going keto, I had resigned myself to just finding a good, no sugar added, smoked ham to nosh on. Leaving behind all of the sugar-laden, or maple syrup-based glazes.
     
    Then it hit me.
     
    DUH, there are sugar-free ingredients I can use!
     
    That got my mind working overtime and I started working on recipes using all kinds of flavors.
     
    Two of my faves with pork are peach and apricot. One of my favorite sauces for grilled pork chops was a peach and bourbon sauce. But I was really excited about the Apricot Mimosa jam I found. So I knew I would have to go with apricot for this recipe, and boy was I happy I did.
     
    So was the entire family!
     
    This recipe is super easy to make, which is one of my favorite kinds of recipes. Plus it doesn't have a laundry list of ingredients. The only special item is the jam. If you can find keto-friendly sugar-free apricot jam locally you could grab it, but I am in love with the Skinny Girl jam so I keep myself stocked up with it at all times.

    INGREDIENTS NEEDED TO MAKE KETO APRICOT BOURBON GLAZED HAM

    • 1 (10-pound) bone-in fully cooked ham, rind removed
    • 1 1/2 cup sugar-free apricot jam
    • 1 1/2 cup bourbon
    • 1/4 cup lemon juice (juice from 2 lemons)
    • 1/2 teaspoon fresh cracked black pepper

    HOW TO MAKE KETO APRICOT BOURBON GLAZED HAM

    STEP 1 

    Preheat oven to 375 degrees F, with the oven rack placed in the lower third of the oven.
     
    STEP 2
     
    Wrap the ham in parchment lined foil and place cut side down on a foil-lined baking sheet. Bake for 1 hour.
     
    STEP 3
     
    Meanwhile, in a medium saucepan, bring jam and bourbon to a boil. reduce heat to a rapid simmer and cook until reduced by half, about 30 to 40 minutes. Stir in lemon juice and pepper and cook for an additional 2 minutes. Remove from heat and reserve 1 cup of the glaze for serving.
     
    STEP 4 
     
    Remove the ham from the oven and increase the oven temperature to 425 degrees F. Unwrap the ham and use a sharp knife to carefully score the fat with long cuts 1/2 inch apart.
     
    STEP 5
     
    Return the ham to the oven and bake for 15 minutes.
     
    STEP 6 
     
    Remove the ham from the oven and brush it with the glaze.

    Bake until the ham is a deep golden brown and reaches an internal temperature of 145 degrees F. about 45 to 60 minutes, brushing the ham with glaze every 15 minutes. Wrap the tip of the ham bone with foil if it starts to over-brown.
     
    STEP 9 
     
    Remove the ham from the oven and place it on a cutting board, tenting it with foil. Allow the ham to rest for 30 minutes.
     
    STEP 10
     
    Serve with reserved glaze.

    FAQS ABOUT

     
    I don't like apricot, can I use another flavor of jam? Absolutely! Sugar-free orange marmalade or peach preserves would work well with this recipe too.
     
    Do I have to use the bourbon? What could I substitute? No, you don't have to use it, it does add a really good flavor but if you would prefer, you could use chicken bone broth in its place. You could even add a touch of keto maple syrup to the bone broth to add another layer of flavor.
     
    I am only serving 8 people, what size ham do I need? The general rule of thumb is 3/4 pound per person, so I would go for a 6 to 8-pound ham. The cooking time will change, I give it 10 to 15 minutes per pound. Check the internal temperature and remove it from the oven when it reaches 145 degrees F.

    Last thoughts about Keto Apricot Bourbon Glazed Ham

     
    I know this is a big batch recipe, and you might not be serving 12, but I always make more than I need because the Mr loves his ham sandwiches  (he is not keto) and I love leftovers. I am constantly grabbing a slice to nibble on through the day. If you want to cook a smaller ham, see my note in the FAQ section above.
     
    It also freezes well, so I will cut a pound, or more, into cubes and freeze it so I have it down the road to make things like my Keto Cheesy Ham and Veggie Chowder.
     
    I also like to make Ham Fried Cauliflower Rice. Just swap out the shrimp and bacon in this recipe for ham, or ham and cheese omelets, or toss some ham into my Cauliflower Mac and Cheese.

    This Jalapeno Ham Salad is a great lunch idea. I eat it in celery or a lettuce wrap.
