Keto Apricot Bourbon Glazed Ham

Ingredients
- 10 pound bone-in fully cooked ham rind removed
- 1 1/2 cup sugar-free apricot jam
- 1 1/2 cup bourbon
- 1/4 cup lemon juice (juice from 2 lemons)
- 1/2 teaspoon cracked black pepper
Instructions
- Preheat oven to 375 degrees F, with the oven rack placed in the lower third of the oven.
- Wrap the ham in parchment lined foil and place cut side down on a foil-lined baking sheet.
- Bake for 1 hour.
- Meanwhile, in a medium saucepan, bring jam and bourbon to a boil. reduce heat to a rapid simmer and cook until reduced by half, about 30 to 40 minutes.
- Stir in lemon juice and pepper and cook for an additional 2 minutes.
- Remove from heat and reserve 1 cup of the glaze for serving.
- Remove the ham from the oven and increase the oven temperature to 425 degrees F.
- Unwrap the ham and use a sharp knife to carefully score the fat with long cuts 1/2 inch apart.
- Return the ham to the oven and bake for 15 minutes.
- Remove the ham from the oven and brush it with the glaze.
- Bake until the ham is a deep golden brown and reaches an internal temperature of 145 degrees F. about 45 to 60 minutes, brushing the ham with glaze every 15 minutes. Wrap the tip of the ham bone with foil if it starts to over-brown.
- Remove the ham from the oven and place it on a cutting board, tenting it with foil.
- Allow the ham to rest for 30 minutes before carving.
- Serve with reserved glaze.
