With me working at home, and Kevin working nights, I tend to lose all track of time.
So sometimes meals get completely forgotten about (yes I, a food blogger, forget meals), and by the time I realize it is time to make something I am at a loss for a quick meal.
I will admit I used to keep some of the boxed foods in the cabinet for just those times, but I have gotten much better about keeping things in my pantry that are quick and healthy.
Breakfast always seemed to give me trouble when my kids were at home.
I hated just giving them cereal, but the last thing I wanted to do at OMG 30 in the morning was cook. Then I discovered make-ahead breakfast casseroles and the skies parted and the angels sang.
OK, maybe that was a bit of an exaggeration.
I did do a happy dance though!
I just threw the casserole together as I was making dinner, I mean it is no big deal to cook up some bacon, ham, or sausage while you are already cooking right? Then get everything into the casserole dish and get it into the fridge for the next morning. Wake the kiddos, pop the casserole into the oven, and you are rockin' and rollin'!
The best part of make-ahead breakfast casseroles, minus the whole make-ahead deal, is that my kids loved them and were so excited to see the different variations I would come up with.
A couple of them are Make Ahead Sausage Breakfast Casserole and Make Ahead Ham and Cheese Breakfast Casserole.
But this Make Ahead Waffle Casserole is my favorite!
Really there is no wrong way to make this. Pick a bread, meat, cheese, and eggs….BOOM breakfast!!

- keto toaster waffles
- keto breakfast sausage
- eggs
- cheddar cheese
- heavy cream
- dry mustard
- pink salt
- cracked black pepper
- keto syrup for serving

This is a basic breakdown of the steps involved in making Make Ahead Waffle Casserole. You will find the full directions in the recipe card at the bottom of the post.
- Lightly grease a 2-quart casserole dish
- Layer 1/2 of the waffle pieces into the bottom of the casserole dish. Top with 1/2 of the browned sausage, and 1/3 of the cheese. Repeat with remaining waffles, sausage, and 1/3 of the cheese
- Mix the eggs, milk, dry mustard, salt, and pepper together in a medium bowl.
- Carefully pour the egg mixture into the casserole dish.
- Cover the casserole dish with plastic wrap and refrigerate.
- Preheat over to 350 degrees F.
- Cover the casserole loosely with foil and bake for 40 minutes.
- Remove the foil, top with the remaining cheese, and bake for 10 to 15 more minutes, or until the eggs have completely set.
Substitutions

- Waffles - you can use homemade keto waffles if you prefer. Just know that they may not have the same texture as the frozen waffles and may absorb more of the egg. You could also use keto bread in place of the keto frozen waffles.
- Sausage - the keto breakfast sausage has less than 1 net carb per serving but you can use store-bought if you prefer, just be aware that the carb count will go up.
- Cheese - feel free to use whatever cheese you prefer.

Storage
Store the leftover Make Ahead Waffle Casserole in an airtight container in the refrigerator for up to 4 days.
I have never frozen this casserole.
FAQ about Make Ahead Waffle Casserole
You can either bake the breakfast casserole immediately or cover the dish with plastic wrap or foil and refrigerate it for up to 24 hours to bake later. I suggest letting it sit for at least 1 hour before baking though.
The leftovers will keep in the fridge for about 3-4 days. Make sure to cover your pan with a lid or wrap it tightly in aluminum foil or plastic wrap.
You can either reheat the leftover casserole, covered with foil, in a 325 to 350 degree oven until warm or, heat individual portions in the microwave.

- 8 keto toaster waffles lightly toasted and chopped
- 1 lb keto country breakfast sausage
- 8 large eggs
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- 1 tbsp mustard powder
- pink salt
- cracked black pepper

- Wholesome Yum Keto Maple Syrup for serving
Instructions
- Lightly grease a 2-quart casserole dish
- Heat a large skillet over medium-high heat and crumble the keto breakfast sauge into it. Using a meat chopped, or wooden spoon, break the sausage up and cook until no pink remains, about 5 to 7 minutes.
- Layer 1/2 of the waffle pieces into the bottom of the casserole dish. Top with 1/2 of the browned sausage, and 1/3 of the cheese. Repeat with remaining waffles, sausage, and 1/3 of the cheese
- Whisk the eggs, milk, mustard powder, salt, and pepper together in a medium bowl.
- Carefully pour the egg mixture into the casserole dish.
- Cover the casserole dish with plastic wrap or foil and refrigerate.
- When you are ready to make the casserole preheat over to 350 degrees F.
- Cover the casserole loosely with foil and bake for 40 minutes.
- Remove the foil, top with the remaining cheese, and bake for 10 to 15 more minutes, or until the eggs have completely set.
- Top with powdered sweetener and keto maple syrup if wanted
