Ham and Cheese Breakfast Burrito Bites – A quick and easy way to make a breakfast the whole family will love.

Did you know that September is the National Family Meals Month?
Sharing meals with my kiddos and Kevin is very important to me but eating together as a family is something that is difficult to do sometimes, with the family going here there and everywhere due to busy schedules, but I try to get us all together at the table for meals as much as possible.
I love those times together. Everyone talking, laughing, sharing things that are going on in their lives. I think that is the thing I miss most about the kids growing up. Now there are girlfriends, work, and tons of other interests that take them away.
Some people might think it is strange, but my kids really are my best friends.
That is why I was so excited to join in with Hormel Foods to support the Family Meals Program.
So many families find it hard to share a meal together. it is so easy to just grab something on your way out the door in the morning, or on the way home at night, but did you know that “Family meals eaten at home have been proven to benefit the health and wellness of children and adolescents, to fight obesity, substance abuse and to make families stronger – creating a positive impact on our communities and our nation as a whole”?
It makes sense that families that share time together are closer and more in touch with what is happening in their lives right?
Now I just drive my kids crazy with phone calls and text messages asking how they are and when are going to be home for a meal.
Yup, I am one of those Moms. Just wait until my granddaughter gets old enough. I will probably drive her crazy too!
One of my favorite things to do when the kids were little was come up with new breakfast ideas. My kids were not morning people.
Oh good Lord no!
Waking them up in the morning was like waking the dead, then they would stumble into the kitchen, looking for something to eat like they had been stranded on a deserted island and hadn’t seen food in a month.
As I have said on many an occasion, we all love our Mexican food, and breakfast burritos were a common, and most welcome, dish at our breakfast table. Many time they consisted of eggs, cheese, and whatever meat was leftover from the previous night’s dinner. It was the one way I could get leftovers into my kids!
However, one of their favorite burritos was ham and cheese. Sometimes with salsa, sometimes with ketchup (hellooooo my strange daughter), but as long as it was packed full of tons of ham and gooey cheese they were happy campers.
Then I thought, what does everyone like?
I mean mini anything is cute right? So why not take my kids’ fave breakfast and make it mini?
TADA breakfast burrito bites were born.
I used Hormel’s Cure 81 ham for these babies and it was perfect. I just diced it up, popped it into the mini tortilla cups with eggs, some diced bell peppers, shredded cheese, and into the oven they went.
Top them with some Salsa Fresca, and wala a breakfast that is quick, easy, and oohhh soooo good!
I may or may not have eaten half of these by myself.
A quick and easy way to make breakfast the whole family will love.
prep time: 10 MINScook time: 25 MINStotal time: 35 mins
1/2 to 1 cup diced Hormel Cure 81 Ham
1/2 cup diced bell pepper (I used grilled peppers I had. You can use any veggies you have in your fridge)
1/4 cup heavy cream
2 teaspoons dry mustard
Fresh cracked black pepper
3/4 cup cheddar/jack cheese, shredded
3 burrito size flour tortillas, cut into quarters (for low carb use these tortillas)
Preheat the oven to 350 degrees F.
Spray your muffin pan with non-stick spray. Microwave the tortillas for 30 seconds to make them pliable. then press a tortilla triangle into each space to create a tortilla “cup”.
In a large bowl, add the eggs, milk, mustard powder, salt, and pepper. Whisk well.
Split the ham and diced peppers between the tortilla cups, pour egg mixture over the toppings, then top with 1 tablespoon cheese each.
Cover with foil and bake for 25 minutes or until egg is cooked through. Uncover for the last couple of minutes if you would like the tortilla edges crispy.
Have some leftover? You can freeze them for another day by placing them upright in a single layer on a baking sheet. Pop them into the freezer for a bit, then place them in a gallon ziploc bag and back in the freezer they go. To eat, just remove the desired amount from the bag, wrap each one in a paper towel and place on a plate. Microwave them individually for approx 1 minute, or until warm.
