Some people might think it is strange, but my kids really are my best friends.

Yup, I am one of those Moms. Just wait until my granddaughter gets old enough. I will probably drive her crazy too!

Waking them up in the morning was like waking the dead, then they would stumble into the kitchen, looking for something to eat like they had been stranded on a deserted island and hadn't seen food in a month.
I hated to just set a box of cereal in front of them. It was fun to put things like Pumpkin Pie Pancakes, Make Ahead Waffle Casserole, or on the table for them.
Bite-sized food!
I mean mini anything is cute right? So why not take my kids' fave breakfast and make it mini?
TADA breakfast burrito bites were born.
I used Hormel's Cure 81 ham for these babies and it was perfect. I just diced it up, popped it into the mini tortilla cups with eggs, some diced bell peppers, shredded cheese, and into the oven they went.
Top them with some Salsa Fresca, and wala a breakfast that is quick, easy, and oohhh soooo good!

Ham and Cheese Breakfast Burrito Bites
ingredients:
- 8 eggs
- 1/2 to 1 cup diced Hormel Cure 81 Ham
- 1/2 cup diced bell pepper (I used grilled peppers I had. You can use any veggies you have in your fridge)
- 1/4 cup heavy cream
- 2 teaspoons dry mustard
- Kosher salt
- Fresh cracked black pepper
- 3/4 cup cheddar/jack cheese, shredded
- 3 burrito-size flour tortillas, cut into quarters
instructions
- Preheat the oven to 350 degrees F.
- Spray your muffin pan with non-stick spray. Microwave the tortillas for 30 seconds to make them pliable. then press a tortilla triangle into each space to create a tortilla "cup".
- In a large bowl, add the eggs, milk, mustard powder, salt, and pepper. Whisk well.
- Split the ham and diced peppers between the tortilla cups, pour egg mixture over the toppings, then top with 1 tablespoon cheese each.
- Cover with foil and bake for 25 minutes or until egg is cooked through. Uncover for the last couple of minutes if you would like the tortilla edges crispy.

Have some leftover? You can freeze them for another day by placing them upright in a single layer on a baking sheet. Pop them into the freezer for a bit, then place them in a gallon ziploc bag and back in the freezer they go. To eat, just remove the desired amount from the bag, wrap each one in a paper towel and place on a plate. Microwave them individually for approx 1 minute, or until warm.
