    Spicy Chicken Noodle Soup (Low-Carb & Gluten-Free): A Thai-Inspired Meal Prep Dream! 🍜

Remember those cheap ramen packets that got you through college? This Spicy Chicken Noodle Soup transforms those memories into something extraordinary - and it's actually good for you! Packed with Thai-inspired flavors and perfectly portioned in convenient mason jars, this low-carb version delivers all the comfort of traditional ramen with an exciting twist.

Going low-carb meant saying goodbye to those quick ramen lunches, but it sparked my creativity in the kitchen. While zucchini noodles have long been my trusty pasta substitute, this recipe takes them to new heights with a spicy peanut broth that combines umami, sweet, spicy, and sour notes into one incredible flavor explosion.

The best part? This Spicy Chicken Noodle Soup isn't just delicious - it's a meal prepper's dream! Make four portions at once, store them in mason jars, and you've got lunch sorted for the work week. Just add hot water, give it a shake, and you're enjoying restaurant-worthy soup at your desk.

My skeptical husband's reaction says it all. When I handed him a jar for lunch, I got "the look" and a doubtful "What the heck is this?" Fast forward to him coming home, raving about how everyone at work wanted the recipe! Even better? My photographer's mom, who lived in Thailand in the '70s, said it transported her right back to authentic Thai street food.

    Reheating Instructions:

    💭My Recipe Tips

    1. Perfect Layering: Layer ingredients in the correct order - sauce on the bottom, proteins and hardy vegetables in the middle, and delicate items on top. This ensures proper cooking and prevents mushy vegetables.

    2. Proper Portions: Don't overfill jars - leave room for hot water and shaking. Mark a fill line on the outside of the jar for consistent results.

    3. Noodle Know-How: Use fresh zucchini noodles for the best texture. If prepping ahead, spiralize just before assembling to prevent excess moisture.

    4. Sauce Success: Heat sauce ingredients just enough to combine smoothly. Overheating can affect flavors and make peanut butter separate.

    5. Customization Control: Adjust spice levels in the base sauce rather than adding heat later. This ensures an even distribution of heat throughout the soup.

FAQ about Spicy Chicken Noodle Soup

How spicy is this chicken noodle soup really?

As written, the spice level is medium but completely customizable. Start with half the chili garlic sauce if you're sensitive to heat, or add more for an extra kick. You can also add sriracha when serving for personalized heat levels.

Can I make this without the mason jars?

Absolutely! While mason jars are perfect for meal prep, you can make this a regular pot of soup. Combine all ingredients except noodles and delicate vegetables, bring to a simmer, then add remaining ingredients until heated.

    Is there a peanut-free version?

Yes! Substitute almond butter or sunflower seed butter for the peanut butter. The taste will be slightly different but still delicious. Just ensure your substitute is sugar-free to keep it low-carb.

    🍽️Serving Suggestions

    Fresh Additions

Offer extra toppings like fresh lime wedges, additional herbs, or extra chili sauce. These fresh elements brighten the reheated soup.

    Complete Meal Options

Make it a fuller meal by adding a side of cucumber kimchi, pickled vegetables, or a simple Asian cucumber salad. The acid helps balance the rich broth.

    Protein Variations

Switch up the protein - try shredded pork, beef, or tofu. Each brings its own character to the soup while maintaining a low-carb profile.

    Temperature Choices

Perfect hot or cold! While traditionally served hot, these noodle jars make a refreshing cold lunch on warm days - just shake and enjoy.
