    This is probably one of my favorite times of the year because we are really smack in the middle of prime grilling time. 
     
    Pretty much if it can't be grilled, we don't eat it. 
     
    Kevin even smoked some corn last night!
     
    Who knew that was a thing???
     
    Well, if it wasn't, it is now because that shizz was amazing!!!
     
    But, even though I loves me some grilled ribeye, and tenderloin (yes I am an expensive date), lately I have been craving hamburgers ?
     
    And when I say burger, I mean a big ol' meaty juicy burger! 
     
    YAS!! That is the ticket!
     
    Now, aside from the way you cook it, the only way to get that juicy burger is by making sure you get the correct hamburger meat.
     
    I have been shopping with people that were buying the meat in a tube and I almost cried. 
     
    Then I tenderly took their hand and guided them to the meat counter where I introduced them to Certified Angus Beef ® brand beef.

    We all know that the key to a juicy burger is fat content right?

    Now, when I talk about burgers, this is where the Mr. would jump in and tell you that a burger should be meat, salt, pepper, cheese, maybe a couple of condiments, and a bun and normally I would agree. Using the right beef means you really don't need to add all of the frills to make that burger taste good.
     
    BUT
     
    I am a food blogger people.
     
    Y'all know that I have a hard time doing anything without playing a bit. 
     
    So we have an agreement. 
     
    Since we eat burgers at least 4 to 6 times a month right now, I get at least 2 of those times to play 
    with new flavors and ideas like Inside Out Bacon Cheddar Burgers with Caramelized Onions and California Burgers with Spicy Red Onion Aioli.

    This idea came to me a few months back when we were checking out a Vietnamese restaurant menu. 
     
    I am a creature of habit and always get Pho. Mini Me got me hooked on it years ago and I am always drawn to it when we go because we just don't go very often. I even get the same Pho every time I go.
     
    I know, borrrrrrring!
     
    But hey, I can't help it, it is good Pho!
     
    However, the last time I decided to branch out, be bold and I ordered something I have always wanted to try, a Banh Mi sandwich.

    I immediately started thinking about what I could make using those amazing spicy, sour, pickled flavors. 
     
    Then it hit me!
     
    A BURGER!!
     
    And that is how this amazing Banh Mi Burger was born. 
     
    I played around a few times with this recipe until I got it dialed into (what I feel is) burger perfection. 
     
    This is a burger that went to Vietnam, fell in love with a Banh Mi, and had a delicious baby!

    Equipment

    • pint mason jars
    • small saucepot
    • Large Mixing Bowl
    • grill pan

    Ingredients
      

    For the Pickled Veggies

    • 1 carrot cut into matchsticks
    • 2 mini cucumbers (Persian or Kirby) thinly sliced
    • 1/2 cup rice wine vinegar
    • 1/2 cup water
    • 1 tbsp Besti Monk fruit and Allulose Sweetener can use regular sugar if not keto

    For the Sauce

    • 1/2 cup keto mayonnaise
    • 2 to 3 tbsp sriracha sauce
    • 1 tsp Tamari

    For the Burgers

    • 1 pound ground beef
    • 2 cloves garlic minced
    • 2 tbsp fish sauce
    • Zest of 1 lime
    • pink salt
    • cracked black pepper
    • 3 keto hamburger buns or your favorite store bought keto buns
    • melted butter (optional)

    Optional Toppings

    • sliced jalapenos
    • fresh cilantro leaves
    Get Recipe Ingredients

    Instructions
     

    For the Pickled Veggies

    • Place carrots and cucumber in a pint glass jar.
    • In a small saucepan, bring the vinegar, water, sugar, and salt to a boil. 
    • Remove from heat and pour into the jar. 
    • Place lid on the jar and allow to sit at room temperature for 1 hour, turning occasionally and shaking to mix, then refrigerate.

    For the Burgers

    • In a large bowl, combine the ground beef with the garlic, fish sauce, and lime zest.
    • Split the meat into 3 equal portions (1/3rd pound) and lightly form into patties the size of your buns, don't press hard, light touch = tender juicy burgers.
    • Season generously with salt and pepper on both sides. Make a dent on one side with your thumb to stop the burgers from shrinking while they cook.
    • Heat a grill or grill pan to high heat. Add the burgers and cook for approx 2 to 3 minutes per side for medium-rare, or 4 to 5 minutes for medium. Do not press! 
    • If you want your buns toasted, brush them with the melted butter and place on the grill until they are toasted to your liking.

    To Serve

    • Place a spoonful of the sauce on the bottom bun, then add the burger. Top with pickled carrots and cucumbers, jalapeno, and cilantro.

      These beautiful juicy burgers have me salivating! I can hardly wait to head to the grocery store and pick up some Angus beef for dinner. My husband loves lighting-up the grill and BBQing during the summertime. This recipe is perfect for tonight!

      There used to be a Bahn Mi place down the street from my home and it was so good. I always wanted to try and make it myself. Love the idea of mixing it with a burger.
