    I am so excited to bring you this Copycat Chipotle Cilantro Lime Cauliflower Rice recipe!

    Mexican food is, hands down, my favorite food on the planet! 

    I grew up in Southern California, so that is pretty much a given.

    As a kid, I was surrounded by little taco shops, and Mexican restaurants to choose from but, for a few months, my daughter and I lived in a smaller inland Northern San Diego town that didn't have as much to choose from as I was used to.

    That is when I found Chipotle and I fell in love with their cilantro lime rice.

    After going low carb a couple of years ago I thought I had to forgo my love of rice, then was happy to discover cauliflower rice, and SUPER happy that the Mr enjoyed it.

    The first time I made it was in my Shrimp and Bacon Cauliflower Fried Rice and he said he would have never known it wasn't regular rice if I hadn't told him.

    Since then I have come up with several cauliflower rice recipes. One of my faves is my Mexican Cauliflower Rice because, well because it is uber cheesy and your girl loves her some cheese!

    But I never get tired of coming up with new ways to enjoy it. Why it took me this long to get this Copycat Chipotle Cilantro Lime Cauliflower Rice recipe on the blog is beyond me though. 

    We eat so much cauliflower here that I have it on auto-reorder in my Imperfect Foods box every week!

    Between making it into rice, roasting it in dishes like this Parmesan Pesto Roasted Cauliflower, and making this Roasted Garlic Mashed Cauliflower because it freezes beautifully, reheats in the microwave like a dream, and helps my meal prep. 

    This veggie that I used to detest as a kid is now one of my favorites! It is so versatile and really takes on so many different flavors I never get bored of it!

    🔪Instructions

    This is a basic breakdown of the steps involved in making Copycat Chipotle Cilantro Lime Cauliflower Rice. You will find the full directions in the recipe card at the bottom of the post.

    To make the cauliflower rice grate the florets, or pulse them in a food processor.

    Heating oil in a skillet, step 3.

    Heat the oil in a large skillet over medium heat.

    Add salt and pepper and cook, stirring occasionally, until the rice begins to brown slightly and is tender-crisp, 5 to 7 minutes.

    Remove the skillet from the heat, stir in the lime zest and juice, taste, and adjust the seasoning if needed.

    📖Variations

    • Coconut Lime - use coconut oil and coconut milk
    • Green Chile - use diced green chiles and cilantro
    • Garlic & Herb - use minced garlic and fresh herbs

    Can I make Cilantro Lime Cauliflower Rice with frozen cauliflower rice?

    I have made this with frozen cauliflower rice in a pinch when I don't have a head of fresh cauliflower handy. I have to admit that it is second best to fresh. It tends to get a bit mushy versus the tender-crisp you can achieve with the fresh.

    We like things spicy, can I add chili powder or cayenne pepper to the Cilantro Lime Cauliflower Rice?

    Sure! I tried to copy the flavor of Chipotle's cauliflower rice but, if you like things with a little kick, you could add chili powder to add some zip.

    How do I store the leftover Cilantro Lime Cauliflower Rice?

    Store the leftovers in an airtight container in the refrigerator for up to 4 days. Cooked cauliflower rice does not freeze well.

    • 1 head cauliflower (4 cups riced)
    • 2 tbsp Avocado or olive oil
    • 1/4 cup fresh cilantro leaves chopped
    • pink salt
    • cracked black pepper
    • 1 lime zested and juiced (about 2 tablespoons juice)

    • Remove the leaves and rough chop the florets and stalk.
    • To make the rice grate the cauliflower, or pulse in a food processor.
    • Heat the oil in a large skillet over medium heat. Add the cauliflower rice and toss to coat with the oil.
    • Add salt and pepper and cook, stirring occasionally, until the rice begins to brown slightly and is tender-crisp, 5 to 7 minutes.
    • Remove the skillet from the heat, stir in the lime zest and juice, taste, and adjust the seasoning if needed.
    • Serve topped with additional chopped cilantro and lime wedges (optional).
