Keto Cherry Garcia Ice Cream: A No-Churn Delight!
Our little town has been blessed with a Ben and Jerry's Ice Cream shop for several years, and it had become a favorite spot for my daughter, daughter-in-law, granddaughter, and me to enjoy some girlie time and a sweet treat. Then I started my keto journey, and sadly, those indulgent ice cream trips were taken off the table for me. I’d watch my girls enjoy their treats while I sipped on a sugar-free drink, dreaming of a keto-friendly alternative that could bring back the joy of those outings.
Determined to find a solution, I started dabbling in making ice cream at home. I came up with copycat versions of my favorite store-bought keto ice creams, Rebel's Mint Chocolate Chip, and a Coffee Chip Ice Cream, but those required an ice cream maker. People kept emailing me, asking for no-churn ice cream recipes, so I decided to take on the challenge.
The first no-churn recipe I aimed to master was a keto version of my all-time favorite Ben and Jerry's flavor, Cherry Garcia. I was nervous because it's such an iconic ice cream and a family favorite. But boy, was I relieved (and thrilled) when this ice cream came out so well! Even the non-keto peeps loved it and said they'd gladly indulge in it any time I wanted to make it.

- Stir in the chocolate chunks, then swirl in the sugar-free cherry pie filling.
- Pour into a 2-quart container, preferably metal, as it will freeze the ice cream quicker.
- Cover with plastic wrap and place in the freezer.

Place the ice cream as far back in the freezer as you can for a quicker freeze. You never want to store ice cream in the door, as it is the warmest place in the freezer.
