I have to admit that this Loaded Chicken Salad recipe came about partially to satisfy my craving for a big ol' baked potato.
Kevin still has them when we grill steaks and yes, I do tend to drool. I don't really miss potatoes at any other time really, but next to a steak and salad, a potato shines like a diamond.
After a year and a half of living la vida low carb, the call from that potato is pretty quiet, but a girl can still have potato dreams right?
So I decided to take those cravings and mash them up with something that I can have any day of the week I want it.
The result is a traditional creamy chicken salad that meets all of the delicious flavors of a loaded baked potato and an amazing tasty low carb marriage happens!
With bacon, chives, and shredded cheese, it is perfect for keeping your lunch interesting or makes a wonderful dish to take to a potluck or summer barbecue.
But, I warn you, it will go fast, so you may want to make a triple (or more) batch.
I thought I was just coming up with a tasty keto-friendly recipe for myself, and y'all, but then the Mr. got a hold of it and it was gone in no time flat!
I love it when my non-keto family members and friends enjoy my ketofied recipes.

- 8 ounces of cooked chicken, cubed (can use this shredded chicken instead)
- 1/2 cup zero carb mayo
- 4 slices bacon, cooked and crumbled or chopped (1/4 cup crumbles)
- 1/2 cup cheddar cheese, shredded
- 1 green onion, chopped
- Redmond's real salt
- Fresh cracked black pepper
