I promise I am going to get back to posting regularly soon. I do!
But it has just been so dang hard. I never thought breaking your ankle would throw your life into such chaos.
But dayum!!
Being umm over 50 probably doesn't help either, I am sure.
I was supposed to go to physical therapy but that was when we had our "All of Winter in a week" week.
Over 2 feet of snow in one week! Thank goodness I have big dogs or I might have lost them in the yard!!
Anywho, I just don't trust that foot/ankle to be there for me so the last thing this girl wanted to do was brave an icy deck and parking lot. I just had images of my clumsy ass slipping and falling and ending up doing this all over again.
Remember, this is the person that fell in a hole that her dog dug in the front yard.
Ya, so much grace and coordination in one place.
NOT!!
How does all of this effect me food blogging you ask?
Well, my foot swells like crazy if I even sit with it hanging normally. I have to keep it elevated at all times to avoid that and, well, it is kinda hard to cook that way, and don't even get me started on having the complainer cook.
OY!
He did the cooking for me when I first broke my ankle and that was enough to send us both to the nut house.
Why?
I mean what is the big deal about cooking?
Well, I am a food blogger because I love to create new recipes. I love food, just love, love, LOVE it.
The Mr.?
Well, if it requires more than heating up an oven or warming something in a skillet he is miserable. The only thing he does enjoy is grilling but, if I am honest with Y'all, it is when he is grilling on his time, not mine.
But, I get it.
He gets nervous when he is making something of mine, or for the blog. He wants it to be perfect (as do I) so there is no joy in it, just stress for him.
So now we are working around my foot.
Are you asking what in the holy hell this story has to do with Keto Chicken Ramen?
Ya, I would be too.
So, let's get to that shall we?
When I went keto I was able to get up, move around, and make whatever food I wanted to make.
Now there are times that just getting up and walking to the kitchen hurts like hell.
SO, in comes meal prep YAY!!
I started setting up yummy lunches that I could just pop into the microwave, or even finger foods, that were super easy to grab and go with (go the couch that is).
Then I was talking to Mini Me about the whole keto dealio while she was grocery shopping.
She picked up a package of ramen noodles and said, "OMG Mom do you know how many carbs are in ramen?"
When I said no she yelled, "52 grams!!!".
She was shocked, I was not. So I set to work to come up with something we would both enjoy that was MUCH lower in carbs.
That was when this deliciousness came to be.
I have to say, being a self-proclaimed pasta addict, I am shocked and actually kinda proud of myself that I don't go through pasta withdrawals on a weekly basis. Zoodles and I have actually become quite good friends, so I don't mind them in the place of traditional pasta. But, for some people, it is a change they have to adjust to.
Now that they fresh made zoodles in produce sections it makes it even easier to make that change.
I even have frozen zoodles for nights when the Mr. is grilling. He heats them up and we add butter and Parmesan cheese.....YUM!!
This works super well with beef or pork too, just an FYI ?

Keto Chicken Ramen
Ingredients
- 16 ounces zucchini noodles
- 2 tablespoons vegetable or chicken broth base concentrate
- 1 1/2 tablespoons coconut aminos
- 1 tablespoon rice wine vinegar
- 1 tablespoon ginger paste
- 2 to 3 teaspoons sambal oelek or more to taste (can use sriracha instead)
- 2 teaspoons toasted sesame oil
- 1 teaspoon fish sauce
- 2 cups cooked chicken (shredded)
- 5 ounces baby greens (I recommend Organic Girl baby spinach with bok choy and kale)
- 4 large shitake mushrooms stemmed and sliced
- 1 large carrot shredded
- 1/2 cup fresh cilantro leaves
- 4 green onions chopped
- 1 teaspoon toasted sesame seeds
Instructions
- In a small bowl, combine the vegetable broth base, coconut aminos, vinegar, ginger, sambal oelek, sesame oil, and fish sauce.
- Divide the broth mixture (approx 2 tablespoons each) into 4 quart sized wide-mouth glass jars with lids, Top with 4 ounces of zucchini noodles, 1/2 cup chicken, 1.25 ounces spinach, sliced mushrooms, cilantro, green onions, and sesame seeds and cover.
- Can be refrigerated for up to 4 days.
- To serve, open a jar and add enough water to cover the contents, about 1 to 1 1/4 cups and shake. Microwave, uncovered until heated through, 2 to 3 minutes.
- Cover the jar and allow to sit for about 3 minutes.
- Stir to combine.
