You Haven’t Had Cinnamon Rolls Until You’ve Tried This Maple Bacon Version!

Ever watch Food Network and think, “Wait…I can make that better?” That’s precisely how these Maple Bacon Cinnamon Rolls were born! I was curled up watching an entire episode dedicated to bacon (because let’s be real: everything is better with bacon), and my little brain went into overdrive. What if we took breakfast’s greatest hero and swirled it into breakfast’s sweetest treat?

It was fall—the air was crisp, the leaves were turning, and all I craved were warm, cozy flavors. That’s when it hit me: maple + bacon + cinnamon rolls. Sweet, salty, fluffy, and undeniably decadent—a combination so crazy it just had to work.

    And oh, did it ever.

I took my beloved fluffy cinnamon roll recipe, the one that’s never once failed me, and I twisted it into something magical. We’re talking about soft, pillowy dough wrapped around crispy, salty bacon and cozy cinnamon, then slathered in a rich, sugar-free maple frosting. Yep—you read that right! When I decided to cut refined sugar from my diet, I knew I couldn’t give up life’s little joys. So, I perfected a frosting so delicious and luxuriously maple-forward that no one will believe it’s sugar-free.

These rolls are everything: warmth on a cool morning, comfort in every bite, and that unforgettable sweet-meets-salty magic that makes people’s eyes light up. Whether it’s a holiday brunch, a slow weekend, or just because—you deserve a treat that tastes this good and feels this good to eat.

Ready to bake something unforgettable? Let’s get rolling!

🥘Sugar-Free Maple Bacon Cinnamon Rolls Ingredient Notes

Here, I explain the best ingredients for my Sugar-Free Maple Bacon Cinnamon Rolls recipe, what each one does, and substitution options. For exact measurements, refer to the recipe card below.

    • 🥛 Warm milk – Helps activate the yeast. Sub: Unsweetened almond milk (See Notes on yeast).
    • 🥚 Room temp eggs – Blends smoother into dough. Tip: Place cold eggs in warm water for 5 mins!
    • 🧈 Unsalted butter – Lets you control the salt. Sub: Salted butter (just reduce added salt).
    • 🌾 Unbleached all-purpose flour – Better flavor + texture than bleached. Sub: 1:1 gluten-free flour blend.
    • 🍯 Besti Monk Fruit + Allulose Sweetener – No bitter aftertaste! Sub: Lakanto or Swerve.
    • 🧂 Active dry yeast – Check expiration date! Old yeast = sad, flat rolls.
    • For the Filling:
    • 🍁 Besti Brown Sweetener – Gives that classic “brown sugar” vibe. Sub: Regular Besti + 1 tsp molasses.
    • 🌿 Cinnamon – Use fresh, fragrant cinnamon for best flavor!
    • 🥓 Bacon fat – SECRET WEAPON! Adds smoky depth. Sub: More butter (but you’ll miss the bacony magic).
    • 🍖 Crispy bacon – Cook extra—you’ll snack on it. Tip: Bake it on a sheet pan for easy crispiness!
    • For the Frosting:
    • 🧀 Cream cheese – Must be room temp or you’ll have lumpy frosting!
    • 🍁 Sugar-free maple syrup – Look for ones without maltitol (it…uh…backs things up).
    • 🍶 Besti Powdered Sweetener – Dissolves perfectly—no grit! Sub: Swerve Confectioners (Swerve does have an aftertaste).
    • 🥓 More bacon – Because everything’s better with bacon on top.

The printable recipe card at the bottom of the page contains a detailed list of measurements and instructions.

Storing and Reheating Your Sugar-Free Maple Bacon Cinnamon Rolls

    FRESHLY BAKED ROLLS:
✅ Counter: Keep them in an airtight container for up to 2 days.
✅ Fridge: Store for up to 5 days (though the texture is best fresh!).

    TO REHEAT:
Oven or Air Fryer (Best for Crispness!): 300°F for 5-8 mins until warm.
Microwave (Fast!): 15-20 seconds per roll (may get slightly soft).

🆒 FREEZING UNBAKED ROLLS (THE PRO MOVE!):

    1. After the second rise (when rolls are puffy in the pan), freeze individual rolls, or cover the whole pan tightly with plastic wrap and foil.
    2. Freeze for up to 1 month.
    3. To bake: Thaw overnight in the fridge. Bake as directed—you may need +2-4 mins since they’re cold!

    🥶 FREEZING BAKED ROLLS:

    1. Let baked rolls cool completely.
    2. Wrap individually in plastic wrap, then place in a freezer bag.
    3. Freeze for up to 2 months.
    4. To enjoy: Thaw on the counter, then warm in the oven (air fryer works too!) at 300°F for 8-10 mins.

    💡 AMBITIOUS BAKER HACK:
“Double the batch! Freeze one pan unbaked. Future you will HIGH-FIVE you for those lazy Sunday mornings.”

    💭My Recipe Tips

    👩🍳 BAKING LIKE A BOSS

    • “Yeast is ALIVE—treat it right!”
Your milk should be warm (~110°F), not hot. Too hot = dead yeast = flat rolls. Test it on your wrist like baby’s bottle!
    • “The Sugar-Free Yeast Trap”
Monk fruit/allulose won’t activate yeast. If using unsweetened almond milk, you MUST add 1 tsp of real honey or maple syrup to the warm milk to get that foam going. Don’t stress—the yeast eats it!
    • “Don’t Murder Your Dough”
When adding flour, stop when the dough is slightly tacky but doesn’t stick to your hands. Over-flouring = tough rolls.

    🥓 BACON HACKS

    • “Bacon Upgrades Everything”
Save that bacon fat! The 1 tbsp in the filling adds insane smoky depth.
    • “Crispy is Key”
Bake your bacon on a sheet pan at 400°F for even crispiness—no splatter, no fuss.

    ⏰ TIME-SAVERS

    • “Rise & Shine…Later”
Let the shaped rolls do their second rise overnight in the fridge. Pull them out 1 hour before baking.
    • “Double the Batch = Future Joy”
Freeze unbaked rolls after the second rise. Thaw in the fridge overnight and bake fresh—because you deserve warm rolls anytime.

    🌾 FLAVOR & TEXTURE SECRETS

    • “Roll with Confidence”
Roll your dough to a ¼” thick rectangle. Too thin, and it’ll tear; too thick, and you’ll have doughy spirals.
    • “Brown Sweetener Hack”
Out of Besti Brown? Mix 1 cup Besti White + 1 tsp molasses. Boom—brown sugar vibes.
    • “Frosting Freedom”
Frosting too thick? Add a splash of milk. Too thin? Add more powdered sweetener. You do you!

    🚨 AVOID THESE MISTAKES

    • Using cold ingredients = sad, slow rise. Your eggs, milk, and butter should be room temp!
    • Skimping on the bacon = regret. Always cook extra for snacking.
    • Baking in a cold oven = uneven cooking. ALWAYS preheat!

Pro Tip: Make sure to save a few extra crumbles for topping the frosting—it looks gorgeous and adds that salty CRUNCH.

FAQ about Sugar-Free Maple Bacon Cinnamon Rolls

Can I make the dough the night before?

Yes! After shaping the rolls, cover the pan tightly and refrigerate overnight. Let them sit at room temperature for 1 hour before baking in the morning.

    Why didn’t my dough rise?

    Two likely culprits:
Your yeast was old (always check the expiration date!).
Your milk was too hot and killed the yeast. Aim for warm (~110°F), not hot.

    Can I make these gluten-free?

You bet! Use a 1:1 gluten-free flour blend (like Bob’s Red Mill). The texture may be slightly denser, but still delicious.

    • 4 ½ cups unbleached all-purpose flour
    • 1 tsp pink salt
    • ½ cup Besti Monk fruit and Allulose Sweetener
    • 1 envelope active dry yeast

    For the filling:

    • 1 cup Besti Brown Sweetener packed
    • 2 1/2 tbsp ground cinnamon
    • 1/3 cup unsalted butter softened
    • 1 tbsp bacon fat
    • 5 slices of crispy bacon crumbled or chopped.

    Get Recipe Ingredients

    Instructions

    • Dissolve the yeast in the warm milk in a large bowl.
    • Mix in the sweetener, butter, salt, and eggs.
    • Add the flour in quarters and mix well. It will get a little stiff, but keep at it until it’s well mixed! If it becomes too difficult to mix, dust your hands with flour and finish mixing by hand.
    • Knead the dough for several minutes and shape into a large ball.
    • Spray the bowl with avocado or olive oil and return the dough to the bowl.
    • Cover it with a clean dishcloth and let it rise in a warm place for about an hour, or until doubled in size.
    • Preheat your oven to 400°F.
    • Roll the dough into a large rectangle (Make sure not to roll it too thin, or it will rip when you roll it up).
    • Combine the butter and bacon fat, if using. Spread the dough with the butter mixture and sprinkle the brown sugar and cinnamon mixture and crumbled bacon.
    • Roll the dough up and cut into 10 rolls (you can discard the two end bits). This will leave you with 8 good-sized rolls.
    • Place rolls in a lightly greased 9x13-inch baking pan. Cover and let rise until nearly doubled, about thirty minutes.
    • Bake rolls in a preheated oven until golden brown, about 15 minutes. While the rolls are baking, beat together the ingredients for the frosting. Spread or drizzle it on warm rolls and top with bacon crumbles before serving.
