For the Rolls
- 1 cup warm milk
- 2 eggs room temp
- 1/3 cup butter melted
- 4 1/2 cups all-purpose flour
- 1 tsp pink salt
- 1/2 cup Besti Monk fruit and Allulose Sweetener
- 1 package active dry yeast
For the Filling
- 1 cup Besti Brown Sweetener packed
- 2 1/2 tbsp ground cinnamon
- 1/3 cup butter softened
For the Frosting
- 3 ounces cream cheese softened
- 1/4 cup butter softened
- 1 1/2 cup Besti Monk Fruit and Allulose Powdered Sweetener
- 1/2 tsp real vanilla extract
- 1/8 tsp pink salt
Instructions
- Dissolve the yeast in the warm milk in a large bowl. Mix in the sweetener, butter, salt, and eggs. Add the flour in quarters and mix well. It will get a little stiff, but keep at it until it’s well mixed! If it becomes too difficult to mix, dust your hands with flour and finish mixing by hand.
- Knead the dough into a large ball and return it to the bowl. Cover it with a dishcloth and let it rise in a warm place for about an hour, or until doubled in size.
- Preheat your oven to 400°F.
- Roll the dough into a large rectangle (Make sure not to roll it too thin, or it will rip when you roll it up). Spread the dough with the softened butter and sprinkle the brown sugar and cinnamon mixture evenly over it. Roll the dough up and cut into 10 rolls (you can discard the two end bits). This will leave you with 8 good-sized rolls.
- Place rolls in a lightly greased 9x13-inch baking pan. Cover and let rise until nearly doubled, about thirty minutes.
- Bake rolls in a preheated oven until golden brown, about 15 minutes. While the rolls are baking, beat together the ingredients for the frosting. Spread or drizzle it on warm rolls before serving.

Prebaked rolls rose beautifully. I read the bake time as 40 min which seemed a bit long. I set the timer for 30 min and they were slightly burned. I will try again at 20 minutes.
Too much sweetener for me. I will decrease the sweetener and add some ground nuts. The sweetener at the bottom of the pan (that leaked out after baking) was elastic/rubbery.
I am excited to make my diabetic family members this recipe again with my own tweaks. I hadn't heard of this flour before...so thanks for that.
