Sugar-Free Chai Fudge (Keto): A Spiced Holiday Treat That Won't Wreck Your Diet! 🍫
Experience the cozy flavors of chai in this creamy, dreamy Sugar-Free Chai Fudge (Keto)! Rich and velvety, this keto-friendly treat delivers all that traditional fudge decadence without the sugar crash. Perfect for holiday cookie platters or any time sweet cravings strike!
Y'all, I've been on quite the sugar-free baking adventure lately! I've been pulling out my old favorite recipes and giving them healthy makeovers to save both my waistline and my sweet tooth. While I've been whipping up all sorts of cookies and treats, I knew I had to remake this chai-spiced fudge - because, let's be real, chai anything is my weakness!
Now, my chocolate-obsessed husband (bless his heart) gave me that familiar skeptical look when I mentioned spiced fudge. What else is new, right? But one bite of this creamy, warmly-spiced treat and he was sold!
The real test came when my son stopped by to pick up a care package of all my sugar-free recipe testing. I practically shoved a piece of this fudge in his face (as any good mama would do). His eyes lit up at the first taste, then quickly turned to concern as he mumbled something about his diet. Has he forgotten what kind of recipes his mama writes? Once I assured him it was completely sugar-free, he snagged two more pieces before heading out the door!
I'd say that's a pretty solid endorsement of this Sugar-Free Chai Fudge (Keto), wouldn't you? When you can fool both my sweets-loving husband AND my diet-conscious son, you know you've got a winner on your hands!

🥘Sugar-Free Chai Fudge Ingredient Notes
Here, I explain the best ingredients for my Sugar-Free Chai Fudge (Keto) recipe, what each one does, and substitution options. For the exact measurements, see the recipe card below.
- Sugar-Free Mini Marshmallows: This creates the perfect fudgy texture and helps with the setting.
- Substitution: Regular mini marshmallows work if you're not following keto.
- Besti Powdered Sweetener: This monk fruit and allulose sweetener provides sweetness without graininess. Substitution: Any powdered keto sweetener works but may change the flavor. Liquid sweeteners will affect texture.
- Heavy Cream: Adds richness and helps create that creamy fudge texture. Substitution: No good substitution for proper texture.
- Pink Salt: Enhances all the flavors while providing essential minerals for keto/low-carb diets. Substitution: Regular sea salt works but lacks the mineral benefits.
- Chai Spices (Cinnamon, Cardamom, Ginger, Nutmeg): Creates that classic chai flavor profile. Substitution: A pre-mixed chai spice blend might work (check the carbs and adjust the amount to taste).
- Real Vanilla: Adds depth and warmth to the spice blend. Substitution: Vanilla bean paste for extra flavor intensity.
- Sugar-Free White Chocolate Chips: Creates the fudgy base and helps with setting. Substitution: Regular white chocolate chips if not following keto.

Storing Your Sugar-Free Chai Fudge
Storage Instructions:
- Counter Storage:
- Not recommended - this fudge needs to stay cold to maintain texture
- Refrigerator Storage:
- Store in an airtight container
- Place parchment paper between layers
- Keeps fresh for up to 2 weeks
- Best served slightly chilled
- Freezer Storage:
- Place in a freezer-safe container
- Separate layers with parchment paper
- Freezes well for up to 3 months
- Thaw in refrigerator before serving
Pro Tips:
- Cut into pieces before storing for easier portion control
- Keep it in the back of the refrigerator where the temperature is most consistent
- Bring to room temperature for about 5 minutes before serving for best texture
- If gifting, keep cold until ready to present
- Consider storing in small batches, so you only remove what you'll eat
Note: Sugar-free fudge can be more temperature-sensitive than traditional fudge, so always err on the side of keeping it cool!
💭My Recipe Tips
1. Perfect Your Pan Prep: Line your pan with parchment paper, leaving an overhang on all sides. This creates "handles" to lift the fudge out easily. A light spritz of cooking spray under the parchment helps it stick to the pan while you pour.
2. Temperature Matters: Have all ingredients at room temperature before starting. Cold cream or butter can make your chocolate seize, resulting in grainy fudge. Not what we want!
3. Spice it Right: Measure your spices carefully - they're what gives this fudge its chai character. If you love a particular chai spice, feel free to add an extra pinch, but remember you can always add more but can't take it away!
4. Melting Magic: When melting your marshmallows, stir frequently and watch your heat. Medium heat is perfect - too high can scorch them, too low won't melt them properly. They should be completely smooth before adding chocolate.
5. Even Steven: Once poured into the pan, tap it gently on the counter several times to remove air bubbles and level the top. For picture-perfect pieces, use a spatula to smooth the surface before chilling.
6. Cutting Clean: For the cleanest cuts, chill the fudge completely and use a large sharp knife. Run the knife under hot water and dry between cuts. Mark your cuts first to ensure even pieces.
7. Storage Smarts: This fudge gets better after a day in the fridge as the flavors meld. Make it ahead for best results, but keep it cold until serving time for the perfect texture.
FAQ about Sugar-Free Chai Fudge (Keto)
Grainy fudge usually happens when your chocolate seizes, or your marshmallows don't melt completely. Make sure all ingredients are at room temperature before starting, and keep stirring until everything is fully melted and smooth before pouring into your pan.
This typically happens if the marshmallows weren't completely melted or if the fudge wasn't chilled long enough. Make sure to melt the marshmallows fully (they should be completely smooth), and give the fudge at least an hour in the refrigerator to set.
Yes! Chopped pecans, almonds, or even more sugar-free white chocolate chips make great additions. Add them after melting the chocolate but before pouring the fudge into the pan. Just remember that add-ins might affect the carb count.
