     Can I have bread on Keto?

     
    This is the million-dollar question we all ask ourselves when we go low carb! And, of course, the answer is no. So we go about our lives and tell ourselves we can do without bread. Right? I know that is what I did.
     
    But a year later I found myself scouring the stores for keto-friendly bread. Which led me to some pretty awful products. Try as I did to eat them and tell myself that was just the sacrifice I would have to make for living the low-carb lifestyle.
     
    Then I hit the internet and tried a handful of keto and low-carb bread recipes. Some were OK and some were horrible. Most were more cakelike than bread. Again, I could push myself to eat them but didn't enjoy them and my hubby, who is NOT low carb, flat out refused them.
     
    I stumbled across a YouTube video from a woman just known as Deidre. She had a recipe for the breadmaker that looked amazing. I was in! I ordered all of the ingredients and a breadmaker and waited for everything to come in.
     
    The day I received everything I went to work and made the first loaf of bread that I actually enjoyed eating since I went keto! 
     
    Hubby ate it, willingly! My kids tried it and they liked it. I made loaves for people in my neighborhood and they liked it. One woman offered to pay me $15 a loaf if I would make it for her every week! 
     
    So I published that recipe and quickly began receiving requests to publish the recipe using a mixer and oven. This is what brought me to this post. I completely understand wanting bread you can actually eat and enjoy! 
     
    I know this recipe isn't gluten-free though. Unfortunately, that is one of the ingredients that help this bread actually look and feel like bread. If I can't have this bread I will use my flatbread recipe to make sandwiches. Again, a recipe my non-keto hubby has given 2 thumbs up to.

    INGREDIENTS NEEDED TO MAKE THE BEST KETO BREAD (OVEN METHOD)

    INGREDIENTS

    • Water
    • Keto honey
    • Dry Active yeast
    • Eggs
    • Butter
    • Ground Golden flax meal
    • Oat Fiber
    • Vital Wheat Gluten
    • Besti Monk Fruit and Allulose powdered sweetener
    • Xanthan gum
    • Pink sea salt

    HOW TO MAKE THE BEST KETO BREAD (OVEN METHOD) 

    STEP 1

    Add the warm water, honey, and yeast to the bowl of your stand mixer, stir and allow to sit for 7 to 10 minutes.

    STEP 2

    Place eggs and butter in the mixer bowl and combine.

    STEP 3

    Add dry ingredients.

    STEP 4

    Mix well.

    STEP 5

    Using the dough hook, mix on medium speed for about 7 minutes or until a dough ball is formed.

    STEP 6

    Place the dough in a well-oiled loaf pan.

    Cover and let rise in a warm, moist area for about 2 hours. * See Notes

    Bake at 375 degrees F for 25 - 30 minutes or internal temperature measures 200 degrees F. * See Notes

    FAQS ABOUT THE BEST KETO BREAD (OVEN BAKED)

     
    Is this keto bread gluten-free?
    No, it contains vital wheat gluten.
     

    Is vital wheat gluten keto?
    Yes, vital wheat gluten is high in protein and low in carbs. It doesn't contain the carbs you find in regular wheat flour. It is just gluten by itself. It gives this keto bread the texture that makes it taste and feel close to the real thing.

     
    Is oat fiber keto?
    The short answer is yes because it’s non-digestible fiber so it does not cause a spike in glucose.
     
    How should I store this keto bread?
    Due to the fact that this bread does not contain all of the preservatives that regular store-bought bread contains it will not last long if you store it the same way you would store that bread. I suggest storing it in the fridge and eating it within the week. I will also slice the bread and freeze it for later and then just toast it when I want to eat it.

    Last thoughts about the BEST Keto Bread (Oven Method)

     
    One of the things that can happen with keto baked goods is that they brown quicker than regular baked goods so this bread can get a very dark crust on it. I recommend watching it and tenting with foil if you feel it is getting darker than you like. 
     
    Even with that, it will still get dark (as you can see from the above photos). It still tastes good and you can trim the crust if it bothers you. I have not been able to figure out why it doesn't get dark in my bread machine but does in the oven.
     
    I highly suggest getting a bread machine if you enjoy this recipe. I make a loaf every week, plus more for neighbors, and being able to just plop the ingredients into the bread machine and let it work is awesome!

    • 1 Measuring cups and spoons set
    • 1 9 x 5 Loaf Pan
    • 1 Bread Proofing Box

    Ingredients
      

    • 1 cup warm water (100 to 115 degrees F)
    • 1 teaspoon honey
    • 1 tablespoon Dry Active yeast
    • 2 eggs room temperature, slightly beaten
    • 2 tablespoons butter room temperature
    • 2/3 cup Ground Golden flax meal
    • 1/2 cup Oat Fiber
    • 1 1/4 cup Vital Wheat Gluten
    • 4 tablespoons Besti Monk Fruit and Allulose powdered sweetener
    • 1/2 teaspoon xanthan gum
    • 1 teaspoon pink salt

    Instructions
