These are the ingredients necessary to make Keto Fried Onions.
- Pork Rinds - I use plain because I add my Cajun seasoning blend but you can use whatever flavor you prefer.
- Onions - just use plain ol' yellow onions here.
- Cajun Seasoning - This recipe was designed using my homemade seasoning blend.

🔪Keto Fried Onions Instructions
This is a basic breakdown of the steps involved in making Keto Fried Onions. You will find the full directions in the recipe card at the bottom of the post.
Place the pork rinds in a large bowl with the almond flour, and Cajun seasoning and whisk to combine.
Using tongs, dip the onions into the egg wash.
Then into the pork rind mixture, coating them well. Set them aside on a plate or cutting board.
Place as many of the onions in the hot oil that will comfortably fit and cook for 2 to 4 minutes, or until golden brown (flipping them halfway is needed). Remove them with a slotted spoon and place them on a paper towel-lined plate.
Hint: The trick is to slice the onions super thin and fry them until they are crispy but not burnt. You don't want onion rings, you want them to be crispy all the way through so you have that classic crunch.

- Onion Varieties: While the recipe calls for yellow onions, you can experiment with different onion varieties like red onions or sweet onions for a unique flavor twist.

- Layering: Place a layer of fried onions at the bottom of the container, then add a sheet of parchment paper or another layer of paper towels. Continue layering the fried onions with paper towels in between to prevent them from sticking together.
- Sealing: Seal the container tightly to prevent air from getting in and making the onions lose their crunchiness.
Tips:
- Avoid storing fried onions in a humid environment, as moisture can quickly make them lose their crispiness.
- If you notice any signs of sogginess or loss of crunchiness, you can try re-crisping them by placing them on a baking sheet in a preheated oven at a low temperature (around 250°F or 120°C) for a short time (about 5-10 minutes). Keep a close eye on them to prevent over-browning.
- For longer-term storage, you can freeze fried onions. Place them in a single layer on a baking sheet, freeze until solid, then transfer them to an airtight freezer-safe container or bag. They can be stored in the freezer for up to a few months. When you're ready to use them, you can reheat them in the oven or an air fryer to restore their crunchiness.
💭Top tip
Drain as much egg as possible off the onions before dredging in the pork rind mixture and discard the mixture if it gets too wet or it will not stick to the onions.

Ingredients
- 1 1/2 lbs yellow onion
- 2 large eggs
- 2 1/2 ounces pork rinds
- 1/2 cup Wholesome Yum Superfine Almond Flour
- 3 tbsp Cajun seasoning blend
- Avocado or olive oil for frying
Instructions
- Peel and slice the onion very thinly (for best results I use a mandoline) and then separate all of the slices.
- In a large, shallow bowl, beat the eggs and set aside.
- To make the pork rinds, add them to the bowl of a food processor and process them on high until very finely ground. *See Notes
- Place the pork rinds in a large bowl with the almond flour, and Cajun seasoning and whisk to combine.
- Pour a small amount, around 1/4 to 1/3 of the pork rind mixture into a shallow bowl.
- Using tongs, dip the onions into the egg wash and then into the pork rind mixture, coating them well. Set them aside on a plate or cutting board. *See Notes
- Repeat until all of the onions have been coated.
- Heat about 1 inch of oil in a large, shallow pan to 375 degrees. *See Notes
- Place as many of the onions in the hot oil that will comfortably fit and cook for 2 to 4 minutes, or until golden brown (flipping them over halfway as needed).
- Remove them with a slotted spoon and place them on a paper towel-lined plate.
- Repeat until all of the onion is fried.
Notes
If the pork rind mixture gets too wet to stick to the onions, discard and add fresh mixture to the bowl.
If you don't have a thermometer you can test the temperature by dropping one onion in the oil and if it sizzles but doesn't go crazy the temp is good.
Store in the freezer for up to 3 months.
If using as a casserole topping don't add until the last 5-10 minutes of baking, otherwise, they will burn! You can add them frozen, no need to thaw!
