Hey there, foodie fam! 👋🍽️ Today, I'm dishing out a recipe that's about to level up your kitchen game in a totally keto way! 🙌 Now, let's spill the tea on how these Keto Fried Onions came to be and why they're totally Nana-approved. Yep, I'm not just a regular mom – I'm a super proud Mom and Nana who's all about sharing the food love with my adult kids and precious grand kiddos. 🤗

So, here's the 411: Growing up, green bean casserole was my jam. Like, I requested it on the regs – not just for the holidays! 🥣 But when I embarked on my low carb journey, that canned mushroom soup was like "Girl, bye!" Not keto-friendly, and definitely not invited to my kitchen party. 🙅‍♀️ So, what's a gal to do? Get creative, of course!

Enter stage left: Condensed Cream of Mushroom Soup – keto style! 🍄🥣 I worked my kitchen magic and conjured up a low carb version of that creamy goodness. With a dash of innovation and a sprinkle of determination, I tackled the holiday classic that had been MIA from my table. But hold up, the plot twist was real – where were my fried onions?! 🧐

Fast forward, and cue the drumroll – Keto Fried Onions have landed in my recipe arsenal! 🎉 Can we just talk about the fact that it took me way too long to make this happen? But hey, better late than never, right? Now, that Low Carb Green Bean Casserole is no longer a holiday fantasy – it's a reality! 🥳

What's the secret recipe to these crunchy keto delights, you ask? Well, it's all in the mix: pork rinds that go from crunchy to crumbly with a whirl in the food processor, a dash of superfine almond flour, an egg wash, and of course, some love! ❤️ And let's not forget the Cajun seasoning blend – because trust me, that's where the magic happens. 🍳✨

Frying these babies up is like creating a masterpiece. Think of it as culinary artistry that's about to grace your table – and your taste buds are gonna throw a full-on celebration! 🎨🍽️ I'm talking about that moment when you dip those thinly sliced onions in that egg wash, roll them in the pork rind mixture, and let them sizzle in hot oil until they're golden perfection. Can you say crispy and dreamy? 😍🔥

Oh, and speaking of dreams, my holiday spread just got a major upgrade. With Keto Fried Onions, my low carb journey has come full circle. From reimagining my beloved green bean casserole to nailing down the ultimate crispy topping, I'm ready to take on the holidays like a kitchen rockstar. 🎸👩‍🍳

So, what's the vibe now? My fam, from kids to grandkiddos, can't wait for those festive gatherings where the scent of deliciousness fills the air, and we celebrate togetherness over fantastic food. This Nana is gleaming with pride, knowing that my culinary creations are making cherished memories for my loved ones. 🤗👵

There you have it, the scoop on my Keto Fried Onions journey – from missing-in-action onions to an unforgettable low carb holiday hero. Cheers to culinary triumphs and celebrations that bring us all closer, one scrumptious bite at a time. 🥂🍴 And remember, fam, food isn't just nourishment – it's an expression of love that brings joy to every plate. 💖

    🥘Keto Fried Onions Ingredients

These are the ingredients necessary to make Keto Fried Onions.

Overhead view of the ingredients needed to make Keto Fried Onions on a white counter.
    • Pork Rinds - I use plain because I add my Cajun seasoning blend but you can use whatever flavor you prefer.
    • Onions - just use plain ol' yellow onions here.
    • Cajun Seasoning - This recipe was designed using my homemade seasoning blend.

A detailed list with measurements and instructions can be found on the printable recipe card at the bottom of the page.

    🔪Keto Fried Onions Instructions

This is a basic breakdown of the steps involved in making Keto Fried Onions. You will find the full directions in the recipe card at the bottom of the post.

Overhead view of a glass bowl containing ground pork rinds, almond flour, and Cajun seasoning. Sliced onions are displayed on a wooden cutting board to the top left, while a bowl of beaten eggs sits to the top right. A silver whisk is positioned to the bottom right, and a blue and white kitchen towel lies to the bottom left.

Place the pork rinds in a large bowl with the almond flour, and Cajun seasoning and whisk to combine.

From above, a white bowl holds beaten eggs, with a slice of onion gripped by metal tongs immersed within. Adjacent to the eggs, sliced onions rest on a wooden cutting board to the upper left. Nearby, a shallow white dish contains the ground pork rind mixture, while a blue and white kitchen towel is positioned to the bottom left.

Using tongs, dip the onions into the egg wash.

An overhead view showcases a shallow white dish holding the ground pork rind mixture, containing an onion slice that was dredged in the egg wash, held by metal tongs. Sliced onions remain on the wooden cutting board to the upper left, while the blue and white kitchen towel is still situated to the bottom left.

Then into the pork rind mixture, coating them well. Set them aside on a plate or cutting board.

From above, fried onions drain on a plate lined with a paper towel, with a silver slotted spoon extending towards the viewer. Positioned to the upper left, a pot of hot oil is visible, while to the upper right, an avocado oil bottle rests. The blue and white towel remains positioned at the bottom left.

Place as many of the onions in the hot oil that will comfortably fit and cook for 2 to 4 minutes, or until golden brown (flipping them halfway is needed). Remove them with a slotted spoon and place them on a paper towel-lined plate.

Hint: The trick is to slice the onions super thin and fry them until they are crispy but not burnt. You don't want onion rings, you want them to be crispy all the way through so you have that classic crunch.

    Substitutions

    • Onion Varieties: While the recipe calls for yellow onions, you can experiment with different onion varieties like red onions or sweet onions for a unique flavor twist.
    • Flour Swap: If almond flour isn't on hand, try other low-carb flour options like coconut flour or ground sunflower seeds. Keep in mind that different flours may require adjustments to the coating mixture consistency.
    • Seasoning Switch: While Cajun seasoning adds a kick, feel free to use your favorite seasoning blend. Italian seasoning, garlic powder, or smoked paprika can bring their own unique flavors to the mix.

    📖Variations

    • Spicy Heat: If you're a spice lover, add a pinch of cayenne pepper or red pepper flakes to the coating mixture for an extra kick.
    • Herb Garden: Experiment with fresh chopped herbs like rosemary, thyme, or parsley mixed into the coating for a burst of herbal goodness.
    • Zesty Zest: Incorporate some citrus zest, like lemon or lime, into the coating mixture to bring a tangy and refreshing twist.

    🍽Equipment

This is the equipment you will need to make Keto Fried Onions.

    • Mandoline slicer
    • 2 shallow bowls
    • food processor
    • Large Mixing Bowl
    • Whisk
    • tongs
    • deep fry & candy thermometer
    • deep skillet
    • slotted spoon

    Storage

    Storage:

    1. Cool Down Completely: Allow the fried onions to cool completely before storing them. This helps prevent moisture buildup, which can lead to sogginess.
    2. Paper Towel Lining: Line an airtight container with paper towels. This will help absorb any residual oil and keep the onions dry.
    3. Layering: Place a layer of fried onions at the bottom of the container, then add a sheet of parchment paper or another layer of paper towels. Continue layering the fried onions with paper towels in between to prevent them from sticking together.
    4. Sealing: Seal the container tightly to prevent air from getting in and making the onions lose their crunchiness.

    Tips:

    • Avoid storing fried onions in a humid environment, as moisture can quickly make them lose their crispiness.
    • If you notice any signs of sogginess or loss of crunchiness, you can try re-crisping them by placing them on a baking sheet in a preheated oven at a low temperature (around 250°F or 120°C) for a short time (about 5-10 minutes). Keep a close eye on them to prevent over-browning.
    • For longer-term storage, you can freeze fried onions. Place them in a single layer on a baking sheet, freeze until solid, then transfer them to an airtight freezer-safe container or bag. They can be stored in the freezer for up to a few months. When you're ready to use them, you can reheat them in the oven or an air fryer to restore their crunchiness.

    💭Top tip

Drain as much egg as possible off the onions before dredging in the pork rind mixture and discard the mixture if it gets too wet or it will not stick to the onions.

    FAQ about Keto Fried Onions

How do I keep my Keto Fried Onions crispy?

Store at room temperature in an airtight container with paper towels to absorb moisture. Pro tip: Avoid the fridge, it's not the crispy crew's BFF.

Can I freeze these Keto Fried Onions for later?

Absolutely! Freeze them in a single layer on a baking sheet, then pop 'em into a freezer-safe container. For a comeback crunch, bake or air-fry to perfection.

How do I re-crisp my Keto Fried Onions if they get a little soft?

Easy peasy! Spread 'em on a baking sheet and give them a short stint in the oven at a low temp (around 250°F or 120°C) – crispy revival, achieved!

    Ingredients

    • 1 1/2 lbs yellow onion
    • 2 large eggs

    • 1/2 cup Wholesome Yum Superfine Almond Flour
    • 3 tbsp Cajun seasoning blend
    • Avocado or olive oil for frying

    Instructions

    • Peel and slice the onion very thinly (for best results I use a mandoline) and then separate all of the slices.
    • In a large, shallow bowl, beat the eggs and set aside.
    • To make the pork rinds, add them to the bowl of a food processor and process them on high until very finely ground. *See Notes
    • Place the pork rinds in a large bowl with the almond flour, and Cajun seasoning and whisk to combine.
    • Pour a small amount, around 1/4 to 1/3 of the pork rind mixture into a shallow bowl.
    • Using tongs, dip the onions into the egg wash and then into the pork rind mixture, coating them well. Set them aside on a plate or cutting board. *See Notes
    • Repeat until all of the onions have been coated.
    • Heat about 1 inch of oil in a large, shallow pan to 375 degrees. *See Notes
    • Place as many of the onions in the hot oil that will comfortably fit and cook for 2 to 4 minutes, or until golden brown (flipping them over halfway as needed).
    • Remove them with a slotted spoon and place them on a paper towel-lined plate.
    • Repeat until all of the onion is fried.

    Notes

If you do not have a food processor you can use a blender or place them in a large, resealable baggie leaving it slightly vented. Use a rolling pin or mallet to crush the pork rinds. Be sure to crush them very finely or they will not stick to the onions.
If the pork rind mixture gets too wet to stick to the onions, discard and add fresh mixture to the bowl.
If you don't have a thermometer you can test the temperature by dropping one onion in the oil and if it sizzles but doesn't go crazy the temp is good.
Store in the freezer for up to 3 months.
If using as a casserole topping don't add until the last 5-10 minutes of baking, otherwise, they will burn! You can add them frozen, no need to thaw!
