Keto Instant Pot Ground Beef Stroganoff: A Low-Carb Twist on a Childhood Favorite!
Hey there, fellow foodies! Let me take you on a journey back to my pre-cooking-with-fresh-ingredients days. Picture this: a busy mom, a chaotic kitchen, and a box of Hamburger Helper Stroganoff. Yep, guilty as charged—I was a Hamburger Helper Mom, and proud of it! But amidst the chaos, that creamy stroganoff goodness was my saving grace. Fast forward to 2004, when I embarked on a culinary adventure of cooking with fresh ingredients. Hamburger Helper was out, but my love for stroganoff remained strong.

But wait, there's more! This recipe isn't just about deliciousness—it's also about convenience. When my son and daughter-in-law were expecting their bundle of joy, I whipped up a batch of this stroganoff as part of their meal prep. 🥘Keto Instant Pot Ground Beef Stroganoff Ingredients
These are the ingredients necessary to make Keto Instant Pot Ground Beef Stroganoff.
- Ground Beef - I use 80/20 grass-fed ground beef if available.
- Mushrooms - I prefer to use cremini (brown) mushrooms for this recipe but you can use button (white) mushrooms if you prefer them.
- Port Wine - I always use a nice tawny port wine in this recipe but if you wish to omit it you can use additional beef bone broth in its place.
A detailed list with measurements and instructions can be found on the printable recipe card at the bottom of the page.
🔪Keto Instant Pot Ground Beef Stroganoff Instructions
This is a basic breakdown of the steps involved in making Keto Instant Pot Ground Beef Stroganoff. You will find the full directions in the recipe card at the bottom of the post.
Turn the Instant Pot on saute, add the butter, and brown the ground beef.
Add the mushrooms, port wine, beef bone broth, onion powder, garlic powder, Dijon mustard, Worcestershire sauce, thyme, paprika, salt, and pepper.
Turn the Instant Pot back to saute and add the cubed cream cheese whisking well until it melts and is incorporated into the sauce.
Add the sour cream and mix well. Season with salt and pepper, and whisk in the xanthan gum if desired.
Helpful Hint: 💡: For an extra flavor boost, try using a mixture of different mushrooms like shiitake or oyster mushrooms alongside cremini mushrooms.
SUBSTITUTIONS
- Ground Beef - You can use ground turkey, ground chicken, or ground pork as alternatives to ground beef.
- Tawny Port Wine - If you prefer not to use alcohol, you can substitute the port wine with beef broth or additional beef bone broth for a richer flavor.
- Cremini Mushrooms - White button mushrooms or any other variety of mushrooms can be used instead of cremini mushrooms.
📖VARIATIONS
- Mushroom Medley - Instead of using just cremini mushrooms, try using a mix of different mushroom varieties such as shiitake, oyster, or portobello mushrooms for added depth of flavor and texture.
- Creamy Coconut Twist - For a dairy-free alternative, substitute coconut cream for the sour cream, dairy-free cream cheese for the cream cheese, and plant-based butter for the butter. This variation adds a rich coconut flavor and makes the dish suitable for those with dairy allergies or dietary restrictions.
- Spice it Up - Experiment with different spices and herbs to customize the flavor profile of the stroganoff. Add a pinch of smoked paprika for a smoky flavor, or sprinkle in some crushed red pepper flakes for a hint of heat.
- Add Vegetables: Boost the nutritional content of the dish by adding more vegetables such as diced celery, bell peppers, or spinach to the stroganoff.
🍽Equipment
This is the equipment you will need to make Keto Instant Pot Ground Beef Stroganoff.
Storage
- Refrigerator Storage: Allow the stroganoff to cool completely before transferring it to an airtight container. Store it in the refrigerator for up to 3-4 days. When reheating, you can use the microwave or stovetop until heated through.
- Freezer Storage: To freeze the stroganoff, portion it into freezer-safe containers or resealable bags, making sure to leave some room for expansion. Label the containers with the date and contents. The stroganoff can be stored in the freezer for up to 2-3 months. When ready to eat, thaw overnight in the refrigerator before reheating.
- Reheating: When reheating the stroganoff, you can do so in the microwave, stirring occasionally until heated through. Alternatively, you can reheat it on the stovetop over medium heat, stirring frequently to prevent sticking or burning.
- Note: You may notice some separation when reheating. Simply stir the stroganoff well to reincorporate the ingredients and adjust the consistency as needed with a splash of broth or cream.
By following these storage instructions, you can enjoy delicious Keto Instant Pot Ground Beef Stroganoff whenever you're in the mood for a comforting and satisfying meal!
💭Top tip
To prevent the cream cheese from clumping when adding it to the sauce, ensure it's at room temperature before adding it to the Instant Pot. This will help it melt smoothly and evenly into the sauce, creating a rich and creamy texture.
