Keto Salisbury Steak: Comfort Food Without the Carbs! 🥩
Transform those TV dinner memories into something extraordinary with this Keto Salisbury Steak! As someone who grew up in the '60s and '70s on TV dinners and convenience foods, Salisbury steak was always my favorite - especially that little square of apple pie mush in the corner (you know what I'm talking about!). But going keto doesn't mean giving up these comfort food classics.
This recipe proves that keto-friendly doesn't mean weird ingredients or bland food. By swapping traditional breadcrumbs for crushed pork rinds, we instantly eliminate 26 grams of unnecessary carbs! And that rich mushroom gravy? Thanks to xanthan gum instead of flour, it's perfectly thick and glossy while keeping everything low-carb.
What makes this Keto Salisbury Steak truly special is how it brings the whole family together. Whether they're following a low-carb lifestyle or not (like my on-again-off-again keto daughter-in-law), no one can tell this is a "diet" recipe. When dinner results in nothing but the sound of forks clinking and happy "mmmmms" - you know you've struck keto gold!

🥘Keto Salisbury Steak Ingredient Notes
Here, I explain the best ingredients for my Keto Salisbury Steak recipe, what each one does, and substitution options. For the exact measurements, see the recipe card below.
- Ground Beef: Use 80/20 for the best flavor and moisture. Substitution: Ground turkey works but will change the flavor profile.
- Crushed Pork Rinds: Replaces breadcrumbs as a low-carb binder. Substitution: Almond flour can work, but pork rinds give the best texture. You can also use keto breadcrumbs.
- Sugar-Free Ketchup: Adds classic flavor without carbs. Substitution: Tomato paste with added sweetener.
- Liquid Aminos: Creates umami depth. Substitution: Coconut aminos or Worcestershire sauce if not strict keto.
- Besti Brown Sweetener: Adds subtle sweetness. Substitution: This sweetener is the best I have tried.
- Beef Consomme: Creates rich gravy base. Substitution: Beef broth, but gravy won't be as rich.
- Xanthan Gum: Thickens gravy without carbs. Substitution: No direct substitute for proper thickening.
- Pink Salt: Enhances flavors while providing minerals needed on keto. Substitution: Regular sea salt works but lacks mineral benefits.

💭My Recipe Tips
1. Perfect Your Patties: Don't overwork the meat mixture when forming patties - this can make them tough. Shape them into oval patties of even thickness and make a slight indentation in the center to prevent them from puffing up during cooking.
2. Browning is Key: Get a good sear on both sides of the patties. This creates a flavorful crust and seals in juices. Make sure your pan is hot enough that you hear a sizzle when the meat hits it.
3. Mushroom Magic: Take time to properly caramelize your mushrooms. Don't crowd the pan, and let them cook until they release their moisture and turn golden brown. This develops deep flavor in your gravy.
4. Gravy Success: When adding xanthan gum, sprinkle it slowly while whisking constantly. Start with 1/2 teaspoon and add more only if needed - it continues to thicken as it sits. Remember, you can always add more but can't take it away!
5. Temperature Control: Use a meat thermometer to ensure perfect doneness. For medium-rare, remove at 135°F; for medium, 145°F. The temperature will rise slightly during resting time.
6. Rest Your Meat: Let the steaks rest covered in foil for a few minutes before serving. This allows the juices to redistribute throughout the meat for maximum juiciness.
7. Make-Ahead Strategy: You can mix and shape the patties ahead of time. Store them covered in the refrigerator for up to 24 hours before cooking. This also helps the flavors develop!
FAQ about Keto Salisbury Steak
Yes! While pork rinds (or keto breadcrumbs) give the best texture, you can use almond flour or even grated parmesan cheese as a binder. Just note that the texture will be slightly different, and you might need to adjust the amount.
Xanthan gum can be tricky! Start with 1/2 teaspoon and wait a few minutes before adding more - it continues to thicken as it sits. If too thick, thin with beef broth. If too thin, mix a tiny bit more xanthan gum with cold water before adding.
Yes, though it will change the flavor profile. If using turkey, you might want to add a bit more seasonings since turkey is leaner and milder than beef.
