Mixed Berry Salad (Low Carb) - Berrylicious Bliss! 🍓🥗✨
Craving a sweet and refreshing side for your spring and summer BBQs? Look no further! Dive into the berrylicious bliss of our Mixed Berry Salad (Low Carb). As someone with a not-so-typical sweet tooth, fruit salads have always been my weakness, especially during sunny gatherings.
In my low-carb journey, my beloved rainbow fruit salad with over 40 grams of carbs per serving became a no-go. But fear not, berry lovers! Berries are a low-carb gem, and this fresh mixed berry salad recipe is here to satisfy all your fruity cravings without the carb overload.
Berries, my absolute favorites, have been a saving grace in my low-carb adventures. From the Keto Strawberry Cheesecake Dip to this Mixed Berry Salad, they've been a delicious constant. Spoiler alert: this salad is not just ridiculously easy to make; it's also the ideal low-carb side for your picnics or BBQ extravaganzas!
Living in Western Washington, we treasure every ray of sunshine and fire up our Traeger whenever we can. Rain or shine, we're grilling up a storm and turning our deck into a flavor-packed haven for delicious BBQ delights.
Now, let's address the 4-letter word: CARB. I have had some comments from readers and I get it; this salad with 6 net carbs per serving isn't a super low-carb keto recipe. Most keto plans aim for under 20 net carbs per day. But hey, for fellow berry enthusiasts willing to budget those carbs, this salad is a delightful treat.
My own low-carb journey is a bit more flexible, aiming for 50 to 75 net carbs a day. It's a lifestyle choice that keeps me feeling good, energized, and, most importantly, craving treats like this Mixed Berry Salad. If loving this salad is wrong, well, I don't want to be right!
Crush your berry cravings with our Mixed Berry Salad and share the bliss. Post photos of your completed dish on Instagram, and don't forget to use the hashtag #BobbisKozyKitchen. Your creation might just shine in our next newsletter! 📸🍓✨

🔪Mixed Berry Salad (Low Carb) Instructions
This is a basic breakdown of the steps involved in making Mixed Berry Salad (Low Carb). You will find the full directions in the recipe card at the bottom of the post.
In a large bowl, combine all of the berries.
In a large bowl, whisk together the almond flour, coconut flour, salt, and baking powder.
Helpful Hint: 💡: For an extra burst of flavor, chill your salad in the fridge for a couple of hours before serving the salad. It's a cool trick that elevates the flavor, making each bite a refreshing delight.
🍽Equipment
This is the equipment you will need to make Mixed Berry Salad (Low Carb).
Storage
Store any leftover Mixed Berry Salad in an airtight container in the refrigerator. For optimal freshness, consume within 1-2 days. The vibrant flavors are at their peak when enjoyed freshly made, but if you need to save some for later, a quick toss before serving can revive the flavors.
Avoid freezing, as it may affect the texture of the berries.
💭Top tip
To ensure a well-balanced sweetness in the dressing, start with a few drops of Better Stevia Liquid and adjust to your taste. It's easier to add more sweetness than to correct an overly sweet dressing, so go easy at first and savor the perfect berry blend!
FAQ about Mixed Berry Salad (Low Carb)
While fresh berries provide the best texture and flavor, you can use frozen berries in a pinch. Just be sure to thaw and drain them before tossing them in the salad to prevent excess moisture.
If you don't have Better Stevia Liquid, you can use your preferred sweetener like keto honey, keto maple syrup, or a keto powdered sweetener. Adjust the quantity to achieve your desired level of sweetness.
To maintain the berries' firmness, wash and drain them just before using, and avoid soaking them in water. Additionally, store the salad in the refrigerator and consume it within 1-2 days for optimal texture.

Can this be made a day ahead of time?
Bobbi
I will say this is best when fresh, but a day ahead should be fine. I eat it for days on end, it is just that the berries aren't as pretty and "perky" after a couple of days, if that makes sense.
