Happy Thursday! Nope, it isn't G-baby Thursday anymore, but never fear, it will now be G-Baby Fridays that we will be celebrating which is super awesome sauce for me because Friday's are a nice quiet work day for me, usually. #famouslastwords
It also means that when Poppa Kevin gets off work he is completely relaxed because he has the weekends off, and he is game to fire up the grill, even if it is raining. Ya, us Washingtonians are hardcore about our grilling! I swear I never grilled this much the entire time I lived in San Diego!
But, with all of that grilling, things can get a bit repetitive and, dare I say boring at times? Ssshhhh don't tell Kevin I said that!
You see, my darling Kevin tends to be a grilling "purist" so, until I came around, he was all about the salt, pepper, maybe some garlic powder, bing bang boom toss that bad boy on the grill and get a cookin'!

I am Miss "What the hell lets try this on it"!
When I told him there was coffee in this rub he looked at me like I had lost my mind. I was just like "Dude.....have you not met me???" Why are you so surprised?
But again, as usual, everything turned out fine and he loved it. When will this man ever learn to trust me?
He actually loved it so much that he....

Let me put it on a ribeye!!!
BOOM! That is just crazy talk people. I seriously contemplated pod people for a hot minute!
He then suddenly transformed into some sort of judge for one of those cooking channel shows.
"Well I really like the deep flavor the coffee give it, but I think the cumin is a bit too assertive (I swear he said assertive) so you might want to cut that back a little".
*Cue me picking my jaw up off of the floor*
Who is this guy and what did he do with my boyfriend????
But, I do have to humble myself and tell you that he was right. Once I cut the cumin back the coffee and chile spice really did their thang and rocked the meat. Dang, why did he have to be right?
Anywhoo, let my little little lesson of humility benefit your weekend grilling plans.

Slap some of this good stuff on it, let it sit for a bit, then toss it on the grill and BOOYAH you got yourself some tasty grilled up grub!!

Spiced Coffee BBQ Rub (Low Carb)
This low carb and keto friendly rub is perfect for steaks and roasts. It will add a nice rich yet spicy kick to your next BBQ.

ingredients:
- 1/4 cup fresh ground coffee (fresh ground yields MUCH more flavor)
- 2 tablespoons Hatch red chile powder
- 1 tablespoon cumin
- 1 tablespoon pinkr salt
- 2 teaspoons fresh cracked black pepper
instructions:
How to cook Spiced Coffee BBQ Rub (Low Carb)
- In a small bowl, combine the coffee, chile powder, cumin, salt, and pepper.
- Pat the steaks dry with a paper towel and lightly oil them with some canola oil. Sprinkle the spiced coffee rub on a baking sheet and roll the steaks (or roast) in the rub, coating on all sides
- Place the steaks on a cutting board and cover with plastic wrap. Let the steaks sit for 1 hour.
