This recipe for Keto Chai Sugar Cookies is a holiday favorite here in our house.
The warm chai spices make them a perfect fall and Thanksgiving treat, and being so easy to make makes them a wonderful addition to your Christmas cookie baking plan.
I have always been a Christmas cookie person. I loved baking for friends and family, even if it was from boxed or refrigerated cookie dough.
As I have said in the past, pre-2005ish, I wasn't much of a cook/baker. I was probably the typical Mom of small kids, running a home-based business, who grew up in the '60s and '70s.
Our Moms relied on a lot of boxed and canned foods so we grew up cooking the same way.
I think the only "homemade" cookies I made were Nestle's tollhouse and peanut butter. Everything else was from a box or a roll of refrigerated dough.
Then, after my surgery and weight loss, I started this journey of cooking homemade and discovered I loved it.
So homemade cookies? Heck ya, sign me up! I went hog wild!!
One cookie I added to my Christmas baking repertoire in 2008 was a chai-spiced sugar cookie.
Mini Me and I were living in So Cal at that time and since it was just the two of us and were really knew no one there, I decided to make bog canisters of cookies for our immediate neighbors.
I bought a ton of Christmas baking magazines and came across a chai sugar cookie recipe I figured my kiddo would love because she loved chai tea.
I was right, they were not only a hit with her, but all of my neighbors loved them and so did I!
Fast forward to 2018 and me embarking on my low carb lifestyle.
Those delicious little treats ended up put away as something I would never again enjoy, until this year. I decided that they really needed to make a reappearance and BOY was I right.
I adapted that recipe to this low carb version and have never been happier.
Now my friends and family can enjoy one of my all-time favorite holiday cookies without all the pesky carbs!!
INGREDIENTS NEEDED TO MAKE KETO CHAI SUGAR COOKIES

INGREDIENTS
- Almond flour (not superfine)
- Wholesome Yum coconut flour
- Besti monk fruit and allulose powdered sweetener
- Gluten-free baking powder
- Ground cinnamon
- Ground ginger
- Ground cardamom
- Ground allspice
- Ground cloves
- finely ground black pepper
- Pinch of pink salt
- Xanthan gum
- Butter
- Pure vanilla extract
HOW TO MAKE KETO CHAI SUGAR COOKIES

STEP 1
Place the almond flour, coconut flour, powdered sweetener, baking powder, cinnamon, ginger, cardamom, allspice, cloves, pepper, and xanthan gum in a food processor and pulse a few times to combine.
STEP 2
Add 1/2 cup softened butter and the vanilla and process until a smooth dough is made.
STEP 3
Remove the dough from the food processor and roll it into a log (about 2 inches in diameter) and wrap it in cling wrap. Place the dough in the freezer for about 30 minutes.
STEP 4
Remove the dough from the freezer and unwrap it. Using a sharp serrated knife, slice the dough into 1/4 inch discs (about 24) and place 12 discs on each baking sheet, spacing them out evenly.
STEP 5
Place one baking sheet in the refrigerator, place the other in the preheated oven and bake for 8 to 10 minutes, or until the cookies begin to turn golden brown around the edges.
STEP 6
In a small bowl, use a small whisk or a fork to combine the powdered sweetener and espresso until a thick but pourable glaze forms. Drizzle all over cooled cookies. Allow the glaze to set.

Can I make these Keto Chai Sugar Cookies ahead of time and freeze the dough? Yes, you can keep the wrapped cookie dough in the refrigerator for up to 5 days, or in the freezer for 9 to 12 months.
Can I roll this Keto Chai Sugar Cookie dough out and make cut-out cookies? Absolutely! Just roll the dough into 2 balls. Then roll the balls between 2 sheets of parchment paper until it’s the desired thickness and place the dough on 2 baking sheets and into the freezer for 15 minutes.
How do I store these Keto Chai Sugar Cookies? Store the baked sugar cookies in an airtight container in a cool dry place. They will last for about 2 weeks.

I like that I can make the dough, wrap it, and keep it in the fridge for times I want some freshly baked cookies. Or, freeze it so when the craving strikes me I can thaw it out and bake some cookies.
It also helps with my holiday planning because standing for long periods of time is difficult for me now so I can make a few batches of these cookies and pop them into the freezer. Then take them out the night before I want to bake and place them in the fridge.
The next day I just slice, bake, and enjoy!!
