    🍪 Keto Chai Sugar Cookies: A Holiday Tradition with a Low-Carb Twist 🍂☕

    In our household, the holiday season is synonymous with the delightful aroma of freshly baked Keto Chai Sugar Cookies. The warm, comforting flavors of chai spices make these treats an ideal companion for fall, Thanksgiving, and of course, the festive Christmas season.

    A Journey from Convenience to Homemade Delights 🏡🍪

    My love affair with Christmas cookies began long before I was a seasoned baker. Back then, boxed or refrigerated cookie dough was my go-to. I was the typical mom, juggling kids and a home-based business, following in the footsteps of the '60s and '70s generation.

    For a while, the only "homemade" cookies I made were Nestle's Tollhouse and peanut butter cookies. Everything else came from a box or a roll of refrigerated dough.

    But life has a way of changing us. Post-2005, after my surgery and subsequent weight loss, I embarked on a culinary journey that opened my eyes to the joys of cooking from scratch. Homemade cookies? Absolutely! I went all in.

    The Chai-Spiced Revelation of 2008 ☕🎅

    In 2008, a significant year for me and my Mini Me, we were living in Southern California. With just the two of us and few acquaintances in the neighborhood, I decided to spread some holiday cheer to our immediate neighbors by baking large canisters of cookies.

    I scoured through a multitude of Christmas baking magazines and stumbled upon a chai sugar cookie recipe. It piqued my interest because my kiddo had a soft spot for chai tea. As it turned out, the cookies weren't just a hit with her but also with our neighbors. And to my delight, I couldn't resist their charm either.

    From Hibernation to Low Carb Renaissance 🍪🎉

    Fast forward to 2018, when I embraced a low-carb lifestyle. Unfortunately, those delicious cookies ended up on the sidelines, seemingly lost forever. Until this year.

    I decided it was high time for them to make a triumphant comeback, albeit with a low-carb twist. I adapted the recipe, and let me tell you, it was a comeback worth celebrating! These cookies now allow my friends and family to enjoy one of my all-time favorite holiday treats without worrying about those pesky carbs.

    I've always had a soft spot for rolled cookie dough recipes. There's something inherently satisfying about making the dough, wrapping it, and keeping it in the fridge for those moments when you crave freshly baked cookies. Or, you can freeze it and have cookies on demand.

    This method also suits my holiday planning perfectly. Given that standing for long periods is challenging for me, I can prepare multiple batches of these cookies, pop them in the freezer, and simply slice, bake, and enjoy whenever the mood strikes.

    🥘Keto Chai Sugar Cookies Ingredients

    These are the ingredients necessary to make Keto Chai Sugar Cookies.

    • Powdered Sweetener - I have only used Besti Monk Fruit and Allulose Powdered Sweetener for this recipe.
    • Almond Flour - I use Wholesome Yum Superfine Almond Flour in this recipe to make the cookies tender.
    • Espresso - you can use espresso (I use this instant espresso) or very strong coffee.

    Add the softened butter and the vanilla and process until a smooth dough is made.

    Remove the dough from the food processor and roll it into a log (about 2 inches in diameter) and wrap it in cling wrap. Place the dough in the freezer for about 30 minutes.

    Ingredients
      

    • 1 cup almond flour not superfine
    • 1/3 cup Wholesome Yum coconut flour
    • 1/2 cup Besti monk fruit and allulose powdered sweetener
    • 1/4 tsp gluten-free baking powder
    • 2 tsp ground cinnamon
    • 1 tsp ground ginger
    • 1 tsp ground cardamom
    • 1/2 tsp ground allspice
    • 1/4 tsp ground cloves
    • 1/4 tsp finely ground black pepper
    • pinch of pink salt
    • 1/4 tsp xanthan gum
    • 1/2 cup unsalted butter softened
    • 2 tsp pure vanilla extract
    • 1 cup powdered sweetener
    • 1 to 2 tbsp espresso or strong coffee

    Instructions
     

    • Place the almond flour, coconut flour, powdered sweetener, baking powder, cinnamon, ginger, cardamom, allspice, cloves, pepper, and xanthan gum in a food processor and pulse a few times to combine. Add 1/2 cup softened butter and the vanilla and process until a smooth dough is made.
    • Remove the dough from the food processor and roll it into a log (about 2 inches in diameter) and wrap it in cling wrap. Place the dough in the freezer for about 30 minutes.
    • Preheat the oven to 350 degrees F.
    • Place parchment paper or a silicone mat on 2 baking sheets.
    • Remove the dough from the freezer and unwrap it. Using a sharp serrated knife, slice the dough into 1/4 inch discs (about 24) and place 12 discs on each baking sheet, spacing them out evenly.
    • Place one baking sheet in the refrigerator, place the other in the preheated oven and bake for 8 to 10 minutes, or until the cookies begin to turn golden brown around the edges.
    • Remove the baking sheet from the oven and set it aside to cool. Place the remaining baking sheet in the oven and bake as before.
    • Allow the cookies to cool completely before handling them. They are very soft and crumbly while they are warm.
    • In a small bowl, use a small whisk or a fork to combine the powdered sweetener and espresso until a thick but pourable glaze forms. Drizzle all over cooled cookies. Allow the glaze to set.
