Keto Cheeseburger Soup (Better Than Takeout!) – Creamy, Low-Carb & Kid-Approved

There’s a reason this Keto Cheeseburger Soup has become a legend in our house: It’s everything you love about a juicy, bacon-loaded cheeseburger—but in a creamy, low-carb soup that’s ready in 60 minutes flat. No bun, no guilt, all the nostalgia. (And yes, my grandkids literally lick their bowls clean.)

Why This Recipe Works for Real Life

    1. The Ultimate Comfort Food Hack
      • Craving a burger but don’t want the carbs? This soup delivers that same savory, cheesy satisfaction—with just 10g net carbs per bowl.
      • Pro Tip: The secret is the Montreal steak seasoning—it adds that “grilled burger” depth without extra work.
    2. Weeknight Savior
      • One pot, no fancy steps. Brown the beef, simmer, stir in cheese, and boom—dinner’s done. Even faster than waiting in a drive-thru line.
      • Budget-Friendly: Ground beef, bacon, and cheese are all you need. (No exotic keto ingredients here!)
    3. Freezer Magic for Lazy Nights
      • Double the batch and freeze portions for up to 3 months. Reheat + add fresh toppings = instant comfort.
      • Meal Prep Win: Pack it in thermoses for school/work lunches that actually excite you.

    The Key to Next-Level Flavor

    • Cheese Matters: Freshly shredded Colby Jack melts smoother than pre-shredded (no anti-caking additives!).
    • Bacon = Flavor Gold: Reserve the crispy bits for topping—they add crunch and Instagram appeal.
    • Toppings Are Non-Negotiable
      • Classic: Dill pickles, red onion, diced tomatoes.
      • Over-the-Top: A drizzle of ranch or sugar-free ketchup.

    Reader-Favorite Tweaks

    • Extra Creamy: Add 2 oz of cream cheese with the cheddar.
    • Veggie Boost: Stir in ½ cup riced cauliflower (it soaks up the cheesy broth perfectly).
    • Spicy Kick: Use pepper jack cheese + a dash of hot sauce.

Why This Isn’t Just Another Soup

    • Kid-Tested, Hubby-Approved: Even non-keto folks won’t guess it’s low-carb.
    • Nutrition Per Serving: 38g protein, 10g net carbs, and enough fat to keep you full for hours.
    • No Sad “Diet” Vibes: This is comfort food, period—just happens to be keto-friendly.

    Final Verdict

This soup is the answer to:

    • “I need dinner FAST.”
    • “My kids won’t eat keto.”
    • “I’m sick of doing dishes.”

Warning: You might get requests to make this weekly. (Don’t say I didn’t warn you!)

    🥄Keto Cheeseburger Soup Ingredient Notes

Here, I explain the best ingredients for my Keto Cheeseburger Soup recipe, what each one does, and substitution options. For the exact measurements, see the recipe card below.

An overhead view of all of the ingredients needed to make Keto Cheeseburger Soup on a white counter. The items are all labeled.
    • Bacon: Adds smoky crunch and fat for sautéing.  Substitute: Turkey bacon (add 1 tbsp olive oil for fat).
    • Montreal Steak Seasoning: The flavor MVP! Blends garlic, pepper, and spices.
    • Ground Beef (80/20): 80% lean keeps the soup rich.  Substitute: Ground turkey (add 1 tbsp butter for fat).
    • Turnips: This is a low-carb potato swap. Choose small to medium turnips for the best texture and flavor.  Substitute: Daikon radish or rutabaga (adjust cook time +5 mins).
    • Colby Jack Cheese: It melts like a dream.  Substitute Cheddar, pepper jack, or Swiss cheese (avoid pre-shredded—it gets grainy!).
    • Heavy Cream: For luxe creaminess.  Substitute: Half-and-half (less rich) or coconut cream (dairy-free).
    • Xanthan Gum: Thickens without flour.  Substitute: 1 tbsp arrowroot powder (not strict keto).
    • Dill Pickles (Garnish): Essential for that "cheeseburger" tang.  Substitute: Sugar-free relish (1 tbsp per bowl).

      💡 Pro Tips
Cheese Hack: Freeze the block for 10 mins before shredding—it’s easier!
Broth Boost: Use bone broth for extra protein and collagen.
Spice Level: Add ¼ tsp cayenne to the steak seasoning for heat.

The printable recipe card at the bottom of the page contains a detailed list of measurements and instructions.

🔪How to Make Keto Cheeseburger Soup

I have included a few step-by-step photos to help you visualize the recipe. The recipe card below provides the full instructions, including amounts and temperatures.

Image shows an overhead view of a blue Dutch oven with chopped celery and onion, shredded carrot, chopped parsley, and seasonings, being sauted in bacon fat. Step 2 in making Keto Cheeseburger Soup.

Saute the onion, carrots, celery, parsley, and steak seasoning.

Image is an overhead view of a blue Dutch oven with cooked vegetables pushed to the side and ground beef added to the center of the pot. This is step 4 in making Keto Cheeseburger Soup.

Push the vegetables to the side and add the ground beef to the center of the pot, breaking it up with a meat chopper or wooden spoon.

Image is an overhead view of a blue Dutch oven that contains cooked veggies and ground beef. On top of that is chopped turnip and there is a glass measuring cup full of beef bone broth being poured into the pot. This is step 6 in making Keto Cheeseburger Soup.

Add the chopped turnips and bone broth and bring to a boil, then reduce to a simmer.

Image is an overhead view of a blue Dutch oven full of creamy soup with shredded cheese being stirred into it. It is step 10 in making Keto Cheeseburger Soup.

Reduce heat to low and stir in the cheese, cook until the cheese melts.

📦 Storing and Reheating Your Keto Cheeseburger Soup

    Storing Leftovers

    ✅ Fridge:

    • Cool completely (within 2 hours of cooking).
    • Store in an airtight container for up to 4 days.
    • Key Tip: Keep toppings (pickles, bacon, fresh herbs) separate to maintain texture.

    ✅ Freezer:

    • Portion soup (without garnishes) into freezer-safe bags or containers.
    • Lay flat to freeze for easy stacking.
    • Lasts 3 months—thaw overnight in the fridge before reheating.
    • Note: Cream-based soups may separate slightly when frozen—just stir well while reheating!

    Reheating for Best Results

    🔥 Stovetop (Best for Creaminess):

    1. Warm soup over medium-low heat, stirring frequently.
    2. Add a splash of bone broth or cream if too thick.
    3. Heat until steaming (165°F / 74°C).

    ⚡ Microwave (Quick Fix):

    • Cover the bowl with a damp paper towel.
    • Heat in 30-second intervals, stirring between each.
    • Prevent Splatters: Place a pickle slice on top to absorb steam!

🌪️ Air Fryer (For Crispy Bacon Topping):

    • Reheat soup separately, then air fry reserved bacon at 375°F (190°C) for 2 minutes to re-crisp.

    💡 Pro Tips

    • Revive Creaminess: Stir in 1 tbsp fresh cream after reheating.
    • Freeze Single Servings: Use mason jars (leave 1-inch headspace) for grab-and-go lunches.
    • Avoid Grainy Cheese: Reheat gently—high heat can make cheese separate.
Image is an overhead view of a blue Dutch oven full of creamy Keto Cheeseburger Soup. To the sides of the Dutch oven are small bowls full of toppings for the soup.

    💭My Recipe Tips

    1. Cheese That Melts Like a Dream

    • Shred it cold: Pop your cheese block in the freezer for 10 minutes before grating—it’ll melt smoother than pre-shredded (which has anti-caking additives).
    • Low and slow: Stir the cheese in off the heat to prevent clumping.

    2. Bacon = Flavor Gold

    • Cook it first: Render the fat to sauté veggies in bacony goodness.
    • Reserve some crispy bits for garnish—they’ll add crunch to every bowl.

    3. Thickness Control

    • Too thin? Sprinkle an extra ¼ tsp xanthan gum while whisking.
    • Too thick? Stir in ¼ cup bone broth or cream.

    4. Picky Eater Hack

    • Blend the soup before adding beef for a “cheesy potato soup” vibe (kids won’t spot the turnips!).

    5. Spice It Your Way

    • Smoky: Add ½ tsp liquid smoke with the broth.
    • Spicy: Use pepper jack cheese + a dash of hot sauce.

    6. Meal Prep Shortcut

    • Chop all veggies the night before and store in the fridge.
    • Bonus: Freeze individual portions with silicone muffin cups of toppings (diced pickles, onions, etc.).

    7. The Magic of Toppings

    • Crunchy: Fried pork rinds or crushed whisps.
    • Fresh: Thinly sliced scallions or jalapeños.

    8. Double the Batch

    • This soup tastes even better day two as flavors meld.

    FAQ about Keto Cheeseburger Soup

    Can I make this dairy-free?

es! Swap heavy cream for coconut milk, cheese for nutritional yeast + 1 tsp miso paste, and sour cream for cashew cream. (It’ll taste different but still creamy!)

    Is this soup freezer-friendly?

Yes, but... Freeze without toppings. Reheat gently and add fresh garnishes to avoid mush.

My soup is too thin! Help!

Whisk in ½ tsp xanthan gum or simmer uncovered for 5 mins. If it's too thick, add bone broth 1 tbsp at a time.

    Instructions

    • In a dutch oven or large saucepan, over medium-low heat, cook the bacon until the fat renders and the bacon is crispy, about 5 to 7 minutes. Remove the bacon with a slotted spoon to a paper towel-lined plate to reserve for later.
    • Raise the heat to medium and add the onion, carrots, celery, parsley, and steak seasoning.
    • Saute until vegetables are tender, about 7 to 10 minutes.
    • Push the vegetables to the side and add the ground beef to the center of the pot breaking it up with a meat chopper, or wooden spoon.
    • Cook until no pink remains, about 7 to 10 minutes.
    • Add the chopped turnips and bone broth and bring to a boil, then reduce to a simmer.
    • Cover and continue to cook until the turnips are tender, about 15 minutes.
    • Stir in the heavy cream and bring to a simmer.
    • Sprinkle in 1/2 teaspoon of xanthan gum and whisk until the soup begins to thicken. Add the remaining 1/2 teaspoon if you prefer a thicker soup.
    • Reduce heat to low and stir in the cheese, cook until cheese melts.
    • Remove from heat; stir in the sour cream.
    • Taste and add salt and pepper if needed.
    • Serve soup topped with the cooked bacon and whatever other garnish you prefer.

    Notes

Other potato replacements that can be used are daikon radish or rutabaga.
You want to use freshly shredded cheese in this because pre-shredded has a coating that prevents it from clumping in the bag but it also can make it grainy when it melts in things like this soup.
