Are French Fries Keto?
Of course, we know that, if you are talking about traditional French fries, the answer would be no, right?
When I first started the low carb lifestyle I didn't know much, but what I did know was potatoes were a no-no food. Which caused me a bit of sadness. Pasta was the biggest one for me to give up, but potatoes were a close second!
And why? Why is it that potatoes are off-limits for keto?
Well, the easy answer is that a medium russet spud has about 25 to 35 grams of net carbs. So for those on the traditional keto diet that only allows you 20 net carbs per day, that is quite a bit over.
The same goes for any other potato, including sweet potatoes.
If you are living more of a low-carb vs keto lifestyle, which typically allows anywhere up to 100 net carbs a day, you could probably find a way to fit potatoes in once in a while. But I know when it comes to me if I allow myself to enjoy a baked potato, or some crinkle cut fries, my body starts craving them more and more and it can get pretty miserable having to deny yourself.
So I set out to try and come up with alternatives to potatoes.
Mashed potatoes were no problem. This Roasted Garlic Mashed Cauliflower recipe is so good my non-keto family and friends request it instead of traditional mashed potatoes!

- Rutabaga
- Extra-virgin olive oil or avocado oil
- Fresh rosemary
- Pink sea salt
- Fresh cracked black pepper
- Crushed red pepper flakes (optional)
HOW TO MAKE THE BEST KETO FRENCH FRIES
STEP 1
Heat your oven to 400 F with the oven rack in the middle. Line a rimmed baking sheet with parchment paper for easy cleanup.
STEP 2
Place a wire baking rack on the sheet pan.
STEP 3
In a large bowl, combine the ingredients and toss to combine well.
STEP 4
Spread rutabagas on the wire rack on the baking sheet, being sure to not overcrowd.
STEP 5
Roast until golden and crispy, about 35 to 45 minutes.
STEP 6
Serve with sugar-free ketchup or ranch.

What is the best way to cut rutabaga into fries?
Step 1: Place the rutabaga on a cutting board. Use a very sharp knife to cut it vertically down the middle through the stalk.
Step 2: With each rutabaga half on its flat side, slice into semi-circles. You can cut them into 1/2 to 1/4 inch thickness, depending on how thick you like your french fries.
Step 3: Remove the outer skin using a paring knife or vegetable peeler.
Step 4: Now that you’ve removed the skin, lay the pieces on a cutting board and slice them into fries.
How can I make sure my fries get crispy?
You need to cut your fries as evenly as possible otherwise some fries can get too done while others aren't completely cooked. Make sure your fries are evenly coated with the oil and seasoning and don't overcrowd them on the rack. You want to make sure there is room for them to get the air circulated all around.
How long will my leftover keto fries keep?
Once cooked, these fries will keep well in an airtight container in the fridge for 3 to 4 days. To reheat, place them in the toaster oven or regular oven on high heat so they can crisp up again.
