We BBQ a lot, which gives me a break when it comes to planning and making the entire meal and just leaves me responsible for coming up with side dish ideas. My husband had mentioned that he loves the traditional sides we rotate for all of our grilled and BBQ main dishes, but he has been kinda looking for something new. I remembered a salad that I had when I visited Puerto Vallarta, Mexico. They had it in the little bar on the beach that I frequented when I was looking for lunch or a light dinner and didn't feel like going into town. They made a salad with grilled corn, diced tomato, and avocado and a creamy cilantro lime sauce. OMG, it was so good. Since I am keto, I knew that grilled corn was out, but I could use baby corn and cut the carbs, so that is what I did. Just like my Low-Carb Mexican Street Corn Salad, I reached for a can of baby corn and went to town. The result is a wonderfully refreshing and creamy salad that works wonderfully as a side dish, or you can add some grilled chicken or salmon and make it an entire tasty meal!

Ingredients
- 15 ounces (1 can) baby corn rinsed and chopped into bite-sized pieces
- 1 pint grape or cherry tomatoes halved
- 1 avocado diced into 1/2-inch pieces
- 1/4 red onion finely diced
- 1/2 to 1 cup Cilantro Lime Crema
- 1/4 tsp pink salt
- 1/4 teaspoon fresh cracked black pepper
- 2 cups romaine lettuce chopped
- Crumbled cotija or queso fresco cheese, to taste
- Chopped fresh cilantro to taste
Instructions
- Combine the baby corn, avocado, tomatoes, and red onion in a large bowl.
- Add the cilantro lime crema and carefully toss to combine.
- Place the romaine lettuce in a salad bowl.
- Pour the baby corn mixture over the lettuce and toss gently to mix.
