    Hey there, my amazing foodie fam! It's been a while, hasn't it? I apologize for my absence, but dealing with the aftermath of having Covid last year has been quite overwhelming. It's not only affected my ability to work and post, but it has also made day-to-day life quite challenging.

    Imagine having a sense of taste that comes and goes, leaving you reliant on others' opinions (which, for a control freak like me, is tough). Add to that the muscle and joint pain that prevents me from sitting in my office chair for more than a few minutes, brain fog that leaves me wondering what I am doing most of the time, and fatigue that has me wanting to stay in bed most days, it has been a rough time for your girl!

    However, please know that you're always on my mind, along with the mouthwatering recipes I can't wait to share with you when I'm able to. And guess what? Today, I have something truly special for you - Loaded Broccoli Salad (Low Carb) - a recipe I had been working on long before summer was even a blip on the horizon. I was so excited to come up with another great side dish that would work for your family BBQs and cookouts, picnics, or just a nice salad for a hot summer day dinner.

    I wish I had gotten it out to you before now but it is so good that I knew I had to post it even if it is really time for me to be posting back to school dinner ideas, or holiday recipes, but trust me, this one's worth it!

    Now, let me introduce you to my new go-to salad - Loaded Broccoli Salad (Low Carb). Whether my husband feels like firing up the grill or we're having some pan-seared chicken, this salad always steals the show. And I may or may not have devoured it as a meal on its own too!

    Yes, it's THAT good!

    You see, up until now, my all-time favorite side "salad" has been my Deviled Egg Cauliflower Salad. It's so amazing that both keto and non-keto folks keep requesting it. And that truly warms my foodie heart! But every now and then, Momma craves something different - something tangy, crunchy, and bursting with flavor. And that's what led me to create this incredible Loaded Broccoli Salad (Low Carb) that I simply can't get enough of.

    I personally prefer it raw, but my hubby likes his broccoli a bit softer. So, if you're like him and not into the whole "rabbit-style" salad experience, here's a tip for you: place your broccoli in a microwave-safe bowl with a little water and cook it for 3 to 5 minutes, depending on your desired level of tenderness. Then, just follow the rest of the recipe as written. Trust me, it's absolutely fabulous either way!

    🥘Loaded Broccoli Salad Ingredients

    These are the ingredients necessary to make Loaded Broccoli Salad.

    • Broccoli - frozen broccoli can be used if you prefer a softer texture for the salad.
    • Besti Monk Fruit and Allulose Sweetener - I recommend the use of this sweetener since it is the one I used to develop this recipe.
    • Mayonnaise - I use this mayo as it has 0 carbs and uses keto friendly coconut oil.

    🔪Loaded Broccoli Salad Instructions

    This is a basic breakdown of the steps involved in making Loaded Broccoli Salad. You will find the full directions in the recipe card at the bottom of the post.

    Combine all the dressing ingredients in a medium bowl.

    Place the remaining ingredients in a large bowl.

    Add the dressing to the salad ingredients.

    Combine well and serve immediately or cover and place in the refrigerator until served.

    Hint: If you prefer your broccoli softer, place the broccoli in a microwave-safe bowl, add a few tablespoons of water, and cook on high for 3 to 5 minutes depending on how soft you want your broccoli.

    Substitutions

    • Mayonnaise - if you are not a fan of mayo you can use Greek yogurt or sour cream. Please note that the carb count will change so you will need to adjust the nutritional info.
    • Cheddar Cheese - feel free to mix it up by using other shredded cheeses like Monterey Jack, Colby, or a blend of your favorites.
    • Red Onion - if don't like red onion, you can substitute it with sliced green onions or diced shallots for a milder flavor.

    📖Variations

    • Add Some Crunch - Enhance the texture of the salad by tossing in some toasted almond slices or chopped pecans.
    • Burst of Sweetness - For a touch of sweetness, consider adding a handful of these sugar-free dried cranberries.
    • Fresh Herbs - Sprinkle some freshly chopped herbs like dill, parsley, or chives over the salad to give it a burst of freshness.

To maintain the best quality, I recommend consuming it within the first couple of days.

    These ingredients don't stand up well to freezing.

    💭Top tip

    You can eat the salad immediately after you make it but, if you allow the flavors to meld for an hour or two, it tastes even better!

    Can this Loaded Broccoli Salad be served immediately?

    Yes you can serve this salad directly after making it, however I really do recommend you make it at least a couple hours ahead of time to allow the flavors to meld.

    Can I make this salad with cauliflower instead?

    Yes, you could make this salad with cauliflower, or a mix of cauliflower and broccoli if you would like varying textures.

    How long will this Loaded Broccoli Salad last in the refrigerator?

    It is best eaten within a couple of days as the veggies will start to break down after that, but it will still be good up to 4 days.

    • 1 cup keto mayonnaise
    • 1 (to 2) tbsp Besti Monk fruit and Allulose Sweetener
    • 2 tbsp red wine vinegar
    • 1/4 tsp pink salt
    • 1/2 tsp cracked black pepper
    • 4 cups broccoli florets cut into small bites *See Notes
    • 12 strips bacon cooked and chopped (3/4 cups)
    • 8 ounces sharp cheddar cheese shredded (2 cups)
    • 1 small red onion chopped

    Instructions
     

    • In a small bowl, whisk together the first 5 ingredients.
    • Place the bacon, broccoli, cheese, and red on into a salad bowl and pour the dressing over the salad. Toss to evenly coat.
    • Serve immediately or cover and place in the refrigerator until ready to serve.

    Notes

    10 ounces to 1 lb of broccoli should give you approx 4 cups of florets, depending on the size of the stems you will remove.

      It would not let me make a copy so I wasn't able to try it out. It looked really good. I'm a broccoli eater and I would really like to have tried this.

      This recipe is so good. I use it in place of traditional cole slaw. It’s easy to take to pot luck dinners also!
