    For the Filling

    • 1 cup sugar-free lemon curd
    • 1 cup fresh blueberries

    • Heat 1 tablespoon butter in a nonstick skillet over medium heat.
    • Spread 1/4 cup lemon curd on 4 slices of bread, top with several blueberries, then another bread slice. Press together; dip in the egg mixture and cook in the skillet until golden, 2 to 3 minutes per side, adding more butter as needed. Transfer to a baking sheet and bake 10 minutes.
    • Top with powdered sugar and blueberry syrup or sugar-free maple syrup.
