Ingredients

- Whisk eggs, heavy cream or coconut milk, ground ginger, vanilla extract, granulated sweetener and a pinch of salt in a shallow baking dish.
- Heat 1 tablespoon butter in a nonstick skillet over medium heat.
- Spread 1/4 cup lemon curd on 4 slices of bread, top with several blueberries, then another bread slice. Press together; dip in the egg mixture and cook in the skillet until golden, 2 to 3 minutes per side, adding more butter as needed. Transfer to a baking sheet and bake 10 minutes.
- Top with powdered sugar and blueberry syrup or sugar-free maple syrup.
