In a food processor, combine thyme, sage, garlic, and salt and pepper, to taste, and olive oil. Process until a smooth paste adding more olive oil if needed.

Place tin foil around the bones, or use pork and lamb chop frills to prevent them from burning.
Roast until internal temperature reaches 140 degrees F, about 2 hours.

Ingredients
For the roast
- .66 ounces of fresh thyme leaves *See Notes
- .66 ounces of fresh sage leaves
- 3 cloves garlic
- 1 tbsp pink salt
- 2 tsp fresh cracked black pepper
- 1/2 cup olive oil
- 8-10 lb pork crown roast *See Notes
For serving
- Keto Cranberry Pecan Stuffing
- Mashed Turnips
- Keto Gravy
Instructions
- In a food processor, combine the thyme, sage, garlic, and salt and pepper, to taste, and olive oil. Process until a smooth paste adding more olive oil if needed.
- Generously salt and pepper the pork crown roast and rub the herb mixture all over it.
- Place tin foil around the bones, or use pork and lamb chop frills to prevent them from burning.
- Place in a roasting pan.
- Place the pan in the refrigerator for up to 24 hours.
- When ready to cook add the scraps into the bottom of the pan alongside the roast. This will help with the gravy later.
- Set the roasting pan on the counter to bring the pork to room temperature prior to cooking.
- Preheat oven to 250 degrees F and adjust oven rack to the bottom third of the oven so the roast will fit completely inside.
- Roast until internal temperature reaches 140 degrees F, about 2 hours.
- Remove from oven and tent with foil for at least 15 minutes and up to 45 minutes. Meanwhile, increase oven temperature to 500 degrees F.
- Return roast to oven and cook until crisp and browned on the exterior, about 10 minutes. Remove from oven, tent with foil, allow to rest for 15 minutes, then carve by slicing in between each rib and serve.
