- 1 tbsp pink salt
- 2 tsp fresh cracked black pepper
- 1/2 cup olive oil
- 8-10 lb pork crown roast *See Notes
For serving
- Keto Cranberry Pecan Stuffing
- Mashed Turnips
- Keto Gravy
Instructions
- In a food processor, combine the thyme, sage, garlic, and salt and pepper, to taste, and olive oil. Process until a smooth paste adding more olive oil if needed.
- Generously salt and pepper the pork crown roast and rub the herb mixture all over it.
- Place tin foil around the bones, or use pork and lamb chop frills to prevent them from burning.
- Place in a roasting pan.
- Place the pan in the refrigerator for up to 24 hours.
- When ready to cook add the scraps into the bottom of the pan alongside the roast. This will help with the gravy later.
- Set the roasting pan on the counter to bring the pork to room temperature prior to cooking.
- Preheat oven to 250 degrees F and adjust oven rack to the bottom third of the oven so the roast will fit completely inside.
- Roast until internal temperature reaches 140 degrees F, about 2 hours.
- Remove from oven and tent with foil for at least 15 minutes and up to 45 minutes. Meanwhile, increase oven temperature to 500 degrees F.
