    I love everything about Christmas. Picking out the tree, the food, all of the lights and decorations, the food, wrapping the gifts, the food, and picking out the perfect cards for everyone.

    Did I mention the food?

    The kids say I am really good at making them cry with the cards I pick out but I don't mean to, I just always look for the cards that express how I really feel.I am SO not into the rhyming sing-songy kind of cards.

    My favorite thing about Christmas is watching the faces of my loved ones as they open their presents. Especially the G-baby.She is 3 1/2 now and totally into Santa now.

    That smile she had as she sat on Santa's lap is priceless!

    But my second favorite thing is feeding my loved ones delicious food like this Rib Roast with Garlic Herb Butter.

    I love sitting down to a wonderful holiday meal with all of my loved one's favorite dishes.

    Nowadays those dishes include a delicious rib roast.

    But that wasn't always the case.

    Up until a couple of years ago, I was a turkey only girl. The idea of tackling a roast scared the heck out of me!

    🥘Ingredients

    These are the ingredients necessary to make Rib Roast with Garlic Herb Butter.

    • Unsalted Butter - Make sure your butter is at room temperature to make it easy to work with.
    • Garlic - You will need 1 whole head + 6 cloves minced or use 6 teaspoons of pre-minced garlic.
    • Fresh Herbs - You will use chopped and whole sprigs of thyme and rosemary.
    • Fresh Vegetables - You will need 1 large onion + 4 stalks of celery.
    • Beef Consomme - You will need 2 cans of beef consomme, not beef broth. Beef consomme is a much darker liquid with a velvety texture and rich flavor. Because of the gelatin content, consommé has more body than traditional broth or stock.
    • Red Wine - You want to use a full-bodied dry red wine for this. A Bordeaux or cabernet would work well.

    🔪Instructions

    This is a basic breakdown of the steps involved in making Rib Roast with Garlic Herb Butter. You will find the full directions in the recipe card at the bottom of the post.

    STEP 1

    Take the roast out of the refrigerator and place it on a cutting board for an hour to allow it to come to room temperature.

    STEP 2

    Preheat the oven to 450 degrees F.

    STEP 3

    In a small mixing bowl, combine the butter, garlic, thyme, rosemary, parsley, salt, and pepper.
    Place the quartered onion, halved garlic head, and celery stalks in the bottom of a roasting pan. Scatter the herbs around them.

    STEP 4

    Pat the roast dry and, using your hands, or a rubber spatula, spread half of the herbed butter on the bottom of the roast (where the bones are). Turn the roast over and place it in the roasting pan using the vegetables as a rack. Spread the remaining butter on the top of the roast (the fat side).

    STEP 5 

    Start the roast perfect app.

    STEP 6

    Place the roast in the oven for 15 minutes and sear. When the app timer goes off, drop the temperature to 325. Baste the roast with the butter drippings in the pan. Continue to baste every 30 mins.

    Storage

    Store any leftover rib roast with garlic herb butter in an airtight container in the refirgerator for 5-7 days.

    Freeze any leftover rib roast for up to 6 months.

    💭Top tip

    The internal temperature for a medium rare roast is 125 to 130 degrees F. The roast will continue to cook once it is tented and resting so aim for a 115 to 120-degree internal temperature when you pull your roast out of the oven.

    FAQ about rib roasts

    What should I look for when choosing my rib roast?

    For the most flavor, tenderness, and juiciness, look for a roast that has a lot of marbling. You don't want large chunks of fat, but the fine lacey-like striations of intramuscular fat running through the roast. This will ensure that your roast is tasty, juicy, and tender.

    What does "grade" mean?

    The grades classify the meat according to fat marbling and age--as well as by price. Prime is the best, followed by Choice and Select.

    How long does it take to bring my rib roast to room temperature?

    It will take 2 to 3 hours depending on the size of your roast.

    Ingredients

    • 1 onion quartered

    • 4 stalks celery
    • 6 sprigs thyme
    • 4 sprigs rosemary
    • 2 (10-ounce) cans beef consume
    • 1 cup dry red wine
    • 2 tablespoons cornstarch * See notes for Keto substitute
    • 2 tablespoons cold water

    • When the roast perfect app timer goes off check the internal temperature of the roast. It should be between 115 to 120 degrees F, remove the roast from the oven. * See notes
    • Remove the bones from the roast and place it on a cutting board, tent with foil.
    • Strain the dripping from the roasting pan into a saucepan and discard the vegetables and herbs. Add the beef consume and red wine and bring to a boil. Continue to boil until the liquid reduces to about 2 cups.
    • Combine the cornstarch and cold water in a small bowl and whisk into the red wine sauce. Continue to cook until the sauce begins to thicken. * See notes for Keto directions
    • Remove the foil from the roast and slice to desired thickness. Top with the red wine gravy.

    Notes

    For Keto friendly gravy substitute 1 teaspoon of Xanthan Gum. Whisk well into the boiling liquid. Remove from the heat. 
    The internal temperature is for a medium rare roast. The roast will continue to cook once it is tented. 125 degrees F is the desired temperature for medium-rare.

      We used to be all in on the turkey, too...but then we realized that we were turkey'd out every year after Thanksgiving. We switched to beef roasts, and now it's a new tradition in our house. This rib roast sounds fantastic...and that garlic herb butter? Yum!!

        I am not sure, I haven ever had this problem. My thinking is that the roast is a but damp? You need to make pat it dry with a paper towel.
