Avocado Bliss: A Keto Love Affair in Every Bite with our BLT Baked Avocado Egg Salad!🥑✨

I absolutely love avocado – it's a borderline obsession, and Kevin can attest to that! Avocado has a special place on every dish in my world – sandwiches, salads, burgers, Mexican delights, and yes, even on every egg dish. Kevin finds it amusingly weird, especially when I have a simple lunch of plain avocado with a sprinkle of salt. But today, let me take you back to the time when Kevin thought I had truly lost my marbles – when I told him about baking an avocado with an egg in it.

After the initial shock wore off and I explained the countless pins on Pinterest featuring this baked avocado and egg idea, Kevin now thinks he should be keeping tabs on my Pinterest activities. Moving on, I decided to merge my two favorite ways of savoring avocado – with eggs and in a salad. Adding a twist from my go-to sandwich, the BLT, resulted in something truly spectacular – a freakin' amazing salad!

The baking process transforms the avocado into an even creamier delight, ripe tomatoes contribute a hint of sweetness, arugula adds a peppery bite, bacon provides that salty nibble, and the egg yolk becomes the dressing that ties this salad together seamlessly. Honestly, I could devour this for breakfast, lunch, and dinner – and yes, I've already done that.

So, fellow avocado enthusiasts, proudly fly that flag high as you dive into this BLT Baked Avocado Egg Salad! It's not just a salad; it's a celebration of everything we adore about avocados. 🥑🍳🥓

Dive into the avocado extravaganza! Try this keto masterpiece and share your avocado love stories with us. Post a photo of your BLT Baked Avocado Egg Salad on Instagram using #BobbisKozyKitchen for a chance to be featured in our next newsletter! 📸🥗

🥘BLT Baked Avocado Egg Salad Ingredients

These are the ingredients necessary to make BLT Baked Avocado Egg Salad.

All of the ingredients needed to make a BLT Baked Avocado Egg Salad on a white background.
    • Avocado - Choose a ripe avocado by gently squeezing it – it should yield slightly to pressure without feeling mushy.
    • Tomato - I prefer a nice meaty Roma tomato for this salad.
    • Parmesan - if possible, always go with freshly grated Parmesan cheese, it adds so much more to the dish!

A detailed list with measurements and instructions can be found on the printable recipe card at the bottom of the page.

Helpful Hint: 💡: For a creamier texture, select avocados that are ripe but still firm.

    📖Variations

    • Vegetarian Option: Omit the bacon for a vegetarian-friendly version; consider adding sautéed mushrooms for extra flavor.
    • Spicy Kick: Drizzle the baked avocado with a chipotle mayo or hot sauce to add a spicy element.
    • Avocado & Shrimp: Top the salad with cooked shrimp for a surf and turf-inspired variation.

    🍽Equipment

This is the equipment you will need to make BLT Baked Avocado Egg Salad.

    • small mixing bowl
    • baking sheet
    • jumbo muffin pan

    Storage

If you have any leftovers of the BLT Baked Avocado Egg Salad, store them in an airtight container in the refrigerator. It's best to consume within 1-2 days for optimal freshness. When ready to enjoy again, you can either eat it cold or gently reheat the avocado and egg portion before serving. Note that the texture of the avocado may change slightly upon reheating.

    💭Top tip

Enhance the flavor by adding a dash of hot sauce or a sprinkle of red pepper flakes for a subtle kick to your BLT Baked Avocado Egg Salad! 🌶️🥑

FAQ about BLT Baked Avocado Egg Salad

Can I make this recipe ahead of time?

While the avocado and egg are best enjoyed fresh, you can prepare the bacon, chop the tomatoes, and assemble the arugula ahead of time. Bake the avocado with the egg just before serving for the best texture.

How do I prevent the avocado from browning?

If you are not baking the avocado immediately try sprinkling a little lemon or lime juice on the cut surface of the avocado can help slow down the oxidation process and keep it looking fresh.

Can I make this recipe for a crowd?

Yes, you can easily scale up the ingredients to make multiple servings. Consider baking the avocados in batches to ensure they cook evenly.

It's funny, I've recently discovered a liking for avocado. I've tried it in the past and disliked it very much, but then I gave it a try again over this past summer and came to the realization that it wasn't as bad as I remembered 🙂

As much as you love avocado is as much as I don't lol. My husband and daughter could eat them all the time, so I make guacamole and other avocado dishes for them. This one will go on the husband's birthday meal list for sure.
