I am sooooo excited!!
#1 for the first time since I broke my foot I cooked and photographed 3 recipes for Y’all in one week!
#2 I have been having tons of luck with my new keto recipe testing.
#3 My Instant Pot has become my BFF!
#4 This stew is so damn good I have eaten it a couple times a week for the last month!!
Maybe not big things in the large scope of life but, in my teeny tiny confined world, it is enough to make me get up and do as much of a happy dance as my gimpy foot will let me do!
It is really hard to believe that it has been almost 7 months since I broke my foot. At times it feels like yesterday and then others it seems like years ago.
A lot of it probably rides on how easily I am getting around on that specific day.
Today is a great day though 😊

I had started eating keto back in June of last year but, after I broke my foot/ankle in August, the Mr was doing the dinners so strickly keto it was not.
Actually, it was well beyond even lazy keto.
There were the nights that he didn’t really want to cook so pizza was on the menu, or Mexican food, or Carl’s Jr.
Pizza and Mexican food we hard to do low carb, but I did the best I could.
At least with Carl’s Jr. I could get a big juicy lettuce wrapped cheeseburger and still stay keto.
The one thing that he LOVES to cook is steak, ribeye specifically, he will even throw a tenderloin in there for me once in a while. He is a steak and potato guy through and through.
But man can not live by steak alone, or at least his budget can’t.
So, as soon as I was able to get up and back in the kitchen, one of my goals was to come up with some hearty beef keto recipes that would be easy to make and full of flavor. He loves my Slow Cooker Beef Stew so I decided that recipe needed to be ketofied ASAP.
I also decided it needed to become an Instant Pot meal. Mostly because he has been giving me grief about buying the IP but never using it.
Well, let’s see, I have been cooped up in bed since August.
But, I do have to be honest, I have kinda been dragging my feet with the whole Instant Pot thing. Afraid of the unknown I think.
Why did I drag my feet?
OhhEmmmGeeee this thing is amazeballs!
All you have to do it saute your beef.
Then add the rest of the ingredients (minus the xanthan gum and parsley), set it to pressure cook, and big, bang, boom, you are noshing on the most amazing bowl of beef stew ever!
I am telling you, between using Certified Angus Beef® brand stew beef, and the Instant Pot, this beef stew recipe blows all other recipes I have ever made out of the water!
And Kevin said that too.
He even ate it several times in one week!
This man hates to eat the same thing over and over 😮
