    Ingredients
      

    • 2 pounds Brussels sprouts washed, trimmed, and halved
    • 3 tablespoons olive oil
    • Kosher salt
    • Fresh cracked black pepper
    • 1 tablespoon unsalted butter
    • 1 clove garlic smashed
    • 1/3 cup keto bread crumbs or ground pork rinds *See Notes
    • 1/2 teaspoon fresh thyme leaves chopped
    • A pinch of crushed red pepper flakes
    Get Recipe Ingredients

    Instructions
     

    • Preheat oven to 425 degrees F.
    • Place Brussels sprouts on a large baking sheet. Drizzle with olive oil, and season with salt and pepper. Toss to combine. Make sure sprouts are in a single layer, cut side down.
    • Place in the oven, and roast until tender and browned 20 to 25 minutes.
    • Meanwhile, warm the butter and garlic in a small skillet, over medium heat, until the garlic begins to brown. Remove and discard the garlic. Add the remaining ingredients, and season with salt. Stir until the bread crumbs become golden brown. Remove from the heat.
    • Place cooked Brussels sprouts on a platter and top with the herbed bread crumbs.

    Notes

    For keto breadcrumbs: Toast 1-2 slices of keto bread until dark but not burnt. Ensure it's dry, as light toasting won't work. After cooling, tear them up and pulse them in a food processor or blender until a breadcrumb texture is achieved.
    For gluten-free use the same amount of ground pork rinds.
