    These are the ingredients necessary to make Roasted Tomato and Garlic Pizza Sauce.

    • Tomatoes - You want nice vine-ripened tomatoes if you can find them, if not Roma will work.
    • Garlic - You want a large head of garlic with tight firm cloves.
    • Oregano - Fresh is really the only way to go with this!

    🔪Roasted Tomato and Garlic Pizza Sauce Instructions

    This is a few of the steps involved in making Roasted Tomato and Garlic Pizza Sauce. You will find the full directions in the recipe card at the bottom of the post.

    Arrange tomatoes, cut side up, on a foil-lined baking sheet. Drizzle with olive oil and sprinkle with salt and black pepper.

    Cut the top off of the head of garlic to expose all of the cloves. Place on a square of tin foil and drizzle with a bit of olive oil. Allow to sit for a few minutes as the garlic absorbs the olive oil. Drizzle it again and wrap up the tin foil. Place on the baking sheet with the tomatoes.

    Helpful Hint: 💡: To save time, consider roasting an extra head of garlic and freezing it in small portions. This way, you'll have roasted garlic ready to go for future recipes, eliminating the need to wait for it to roast every time.

    Substitutions

    • Tomatoes - if you can't find vine-ripened tomatoes you can use ripe Roma's.
    • Oregano - this really is much better with fresh oregano but, if you cannot find fresh, you can use a teaspoon of dried. Make sure to crush the leaves in your palm to release to oils and enhance the flavor.
    • Olive Oil- if you do not have olive oil you can use avocado oil in its place.

    📖Variations

    • Spicy - Add more crushed red pepper flakes or a dash of cayenne pepper for a spicier version. Adjust the quantity to suit your spice preference.
    • Herb Infusion - Experiment with other fresh herbs like basil, thyme, or rosemary. You can add a combination of herbs for a unique flavor profile.
    • Sweet and Tangy Twist - Stir in a tablespoon of aged balsamic vinegar or a teaspoon of keto honey to add a sweet and tangy element to the sauce.

    7. Once processed, carefully remove the jars from the water bath and let them cool on a clean towel or cooling rack.
    8. Check the lids for a proper seal. If the lids don't pop and stay down, refrigerate the jar and use the sauce within a week.

    Pressure Canning (for Stable Shelf Storage):

    1. Follow proper pressure canning procedures and ensure your equipment is in good condition.

    • 2 tbsp olive oil plus more for drizzling

    • 1 tbsp fresh oregano leaves chopped
    • 1 6-ounce can tomato paste
    • 1/2 to 1 tsp crushed red pepper flakes
    • 2 cups water

    Instructions
     

    • Preheat over to 375 degrees F.
    • Arrange tomatoes, cut side up, on a foil lined baking sheet. Drizzle with olive oil and sprinkle with salt and black pepper.
    • Cut the top off of the head of garlic to expose all of the cloves. Place on a square of tin foil and drizzle with a bit of olive oil. Allow to sit for a few minutes as the garlic absorbs the olive oil. Drizzle it again and wrap up the tin foil. Place on the baking sheet with the tomatoes.
    • Roast the tomatoes until soft and beginning to brown, 45 minutes to 1 hour. If the tomatoes are done before 1 hour, remove the garlic from the baking sheet and set it on the rack in the oven and continue to roast the garlic for the full hour. Cool on sheet.
    • Puree tomatoes, garlic, and oregano in blender until smooth.
    • Heat 2 tablespoons oil in large skillet over medium-high heat. Add tomato puree, tomato paste, and water, stir well. Bring sauce to a boil and then reduce to simmer 30 minutes. Season with salt and pepper. Cool sauce. If not using immediately, store in an airtight in the refrigerator up to a week.

      I have never been too good at growing tomatoes, but this year I had a bit of a bumper crop! So I froze tomato sauce in batches. I wish I would have though to make this sauce. We always make our pizza at home, so I could have used it. Hmmm...I will have to check at the farmers market for more tomatoes this weekend.
