    Y'all, I've been low carb for quite some time now, but I'm still learning new things every day. One of the biggest lessons I’ve learned? Never think anything is off-limits.

    Take eggnog, for example. When I started my low-carb journey, I just assumed that my favorite holiday drink was permanently off the menu. That fear grew when I decided to limit dairy in my diet, too. I thought, “If I can’t have sugar and I’m cutting back on dairy, how could I ever enjoy eggnog again?”

    Well, as it turns out, I was wrong! Eggnog doesn't have to be off-limits. I did some research, tried out a few recipes, and finally found a version from All Day I Dream About Food that became my go-to. After tweaking it a little to fit our needs, I’m excited to share this keto, sugar-free, and dairy-free eggnog recipe with you!

    Is eggnog as nostalgic for you as it is for me? I can’t think of Christmas without eggnog, and the memories go back as far as I can remember! I remember being really little, enjoying homemade eggnog at my Grandma and Grandpa’s house, sitting by the fire. Those are some of my favorite holiday memories.

    And let’s not forget the store-bought stuff my mom would bring home. You know, the thick, sugary eggnog that glugged out of the carton? I don’t even want to think about how much sugar was in that!

    As I got older, adult eggnog came into play, and a lot of that was consumed, too (oops). But of course, I had to give up that version as well due to the added sugar. I know, I’m no fun, right? But no worries, you’re more than welcome to indulge. This keto version is ready for your favorite adult beverage—brandy, rum, or whiskey—add away!

    This recipe allows me to enjoy a festive, guilt-free version of eggnog, and I’m thrilled to share it with you.

    • Whisk eggs, yolks, Swerve, and salt together in a medium saucepan. Slowly whisk in the coconut milk until well combined. Using a candy thermometer, cook the mixture over low heat whisking vigorously and constantly (or the mixture will curdle) until it thickens enough to coat the back of a spoon (it can take up to 15 minutes) and registers 160 degrees F on the thermometer.
    • Stir in the vanilla and the nutmeg.
    • Place in an airtight container and refrigerate for 3 to 4 hours.
    • Just before serving, whip the cream with powdered Swerve until soft peaks form.
    • Pour into glasses, top with a spoonful of whipped cream and a sprinkle of grated nutmeg.
