    Pour the wet mixture over the dry ingredients and stir together using a rubber spatula, just until moist.

    • Keto Wheat Flour - I have only used this flour to make this recipe but you can substitute gluten-free or all-purpose flour 1:1 if you are not counting carbs.
    • Pumpkin Puree - again, if you are not low carb you could substitute applesauce or mashed banana for the pumpkin puree.
    • Sour Cream - you can use Greek yogurt instead of the sour cream or create a homemade buttermilk by adding 1 teaspoon of lemon juice to 1 cup of heavy cream.

    • 1 tbsp Besti Brown Sweetener
    • 1 1/2 tsp gluten-free baking powder
    • 1 tsp baking soda
    • 1 1/2 tsp pumpkin pie spice
    • 1/4 tsp pink salt
    • 1 1/4 cup sour cream
    • 1 cup pumpkin puree this homemade or storebought NOT pumpkin pie filling
    • 2 large eggs
    • 1/4 cup unsalted butter melted

    • Preheat oven to 200 degrees F and heat a waffle iron to medium-high heat.
    • Lightly oil the top and bottom of the waffle iron or coat with coconut oil nonstick spray.
    • In a large bowl, whisk together the keto flour, brown sweetener, baking powder, baking soda, pumpkin pie spice, and pink salt.
    • In a large glass measuring cup or another mixing bowl, whisk together the sour cream, pumpkin puree, eggs, and melted butter.
    • Pour the wet mixture over the dry ingredients and stir together using a rubber spatula just until moist. The mixture will be slightly lumpy.
    • Pour 1/2 cup of the pumpkin mixture into the waffle iron, close gently, and cook until golden brown and crisp, about 4-5 minutes; keep warm in the oven.
    • Serve immediately.
