Perfect for busy weeknights, this one-dish wonder brings all the bold, zesty flavors of classic fajitas without the fuss. With just 30 minutes from start to finish, it’s a lifesaver for anyone juggling work, family, and everything in between.

This recipe was born out of necessity. A few months ago, I was dealing with some health issues, and my husband had to take over the cooking. While I adore him, let’s just say his culinary skills are… limited. Left to his own devices, it was burgers, pizza, and all sorts of non-keto meals. So, I knew I had to come up with something easy, delicious, and low-carb that even he couldn’t mess up.

Enter this Chicken Fajita Casserole! It’s loaded with juicy chicken, colorful bell peppers, onions, and melted cheese—all baked to perfection in one dish. The best part? It’s naturally low-carb, gluten-free, and customizable to suit any taste. Top it with sour cream, guacamole, or fresh cilantro, and you’ve got a meal that’s as fun to make as it is to eat.

Whether you’re following a low-carb lifestyle, need a quick family dinner, or just love the flavors of Mexican cuisine, this casserole is a guaranteed crowd-pleaser. So, grab your baking dish, and let’s make dinner magic!

Overhead view of the ingredients needed to make Chicken Fajita Casserole on a white counter.
    • Boneless, Skinless Chicken Breasts:
Why It’s Here: Provides lean protein and a tender base for the casserole.
Substitution: Use chicken thighs for a juicier, richer flavor.
    • Olive or Avocado Oil:
Why It’s Here: Helps coat the chicken and ensures the seasoning sticks.
Substitution: Use any neutral cooking oil, like coconut or vegetable oil.
    • Mexican Seasoning Blend:
Why It’s Here: Adds bold, zesty flavor with minimal effort.
Substitution: You can use store-bought taco seasoning in a pinch. It is not totally the same, but it will work.
    • Pink Salt:
Why It’s Here: Enhances the flavors and adds trace minerals.
Substitution: Use kosher salt or sea salt if preferred.
    • Bell Peppers:
Why It’s Here: Adds sweetness, color, and a classic fajita flavor.
Substitution: Use any color bell peppers or add poblano peppers for a smoky twist.
    • Onion:
Why It’s Here: Provides a savory, slightly sweet base for the casserole.
Substitution: Use red onion for a milder flavor or shallots for a more delicate taste.
    • Monterey Jack Cheese:
Why It’s Here: Melts beautifully and adds a creamy, mild flavor.
Substitution: Use Pepper Jack for a spicy kick or a Mexican cheese blend for extra flavor.

      Optional Garnishes:
Sour Cream: Adds a cool, creamy contrast.
Guacamole: Brings richness and a fresh, herby flavor.
Chopped Tomato: Adds brightness and texture.
Fresh Cilantro: Provides a fresh, citrusy finish.

      Dietary Adaptations:
Low-Carb: This recipe is naturally low-carb as written.
Gluten-Free: Ensure your seasoning blend and garnishes are gluten-free.
Dairy-Free: Skip the cheese or use a dairy-free alternative, and omit the sour cream.

📦 Storing and Reheating Your Chicken Fajita Casserole

    Storing Leftovers

    1. Cool Completely: Let the casserole cool to room temperature before storing.
    2. Airtight Container: Transfer the leftovers to an airtight container or cover the baking dish tightly with foil or plastic wrap.
    3. Refrigerate: Store in the fridge for up to 3–4 days.

    Freezing

This casserole freezes well for longer storage:

    • Portion It Out: Divide the casserole into individual servings for easy reheating.
    • Freezer-Safe Container: Store in a freezer-safe container or wrap tightly in foil and place in a zip-top bag.
    • Freeze: Keep in the freezer for up to 2–3 months.
    • Thaw: Thaw in the fridge overnight before reheating.

    Reheating

To bring your Chicken Fajita Casserole back to life:

Oven Method (Best for Crispy Topping):

    1. Preheat your oven to 350°F (175°C).
    2. Place the casserole in an oven-safe dish. If it seems dry, add a splash of chicken broth or water.
    3. Cover with foil and bake for 20–25 minutes, or until heated through. Remove the foil for the last 5 minutes to crisp up the top.

    Microwave Method (Quick and Easy):

    1. Place a portion of the casserole in a microwave-safe dish.
    2. Cover with a damp paper towel to retain moisture.
    3. Microwave in 1-minute intervals, stirring in between, until heated through.

    Stovetop Method (For Smaller Portions):

    1. Heat a skillet over medium heat. Add a splash of broth or water to prevent sticking.
    2. Add the casserole and stir occasionally until warmed through.

    Pro Tips for Reheating:

    • Revive the Topping: If the cheese topping loses its crispiness, sprinkle a little extra shredded cheese on top before reheating.
    • Add Freshness: Garnish with fresh cilantro, a squeeze of lime, or a dollop of sour cream after reheating to brighten the flavors.
    • Freeze in Portions: Freeze individual servings for quick, easy meals on busy days.

With these storage and reheating tips, you can enjoy your Chicken Fajita Casserole all week (or month!) long.

    💭My Recipe Tips

    1. Prep Ahead: Chop your vegetables and measure your ingredients the night before to make assembly a breeze.
    2. Customize the Veggies: Add mushrooms, zucchini, or jalapeños for extra flavor and texture.
    3. Season Generously: Don’t skimp on the Mexican seasoning blend—it’s the key to bold, authentic flavor.
    4. Use Thinly Sliced Chicken: If your chicken breasts are thick, slice them in half lengthwise for quicker, more even cooking.
    5. Broil for a Crispy Top: For a golden, bubbly cheese topping, broil the casserole for 2–3 minutes at the end of baking.
    6. Make It Spicy: Use Pepper Jack cheese or add a pinch of cayenne pepper to the seasoning blend for a kick.
    7. Double the Batch: This casserole freezes beautifully, so make extra for quick, easy meals later.
    8. Let It Rest: Allow the casserole to cool for 5–10 minutes before serving. This helps the flavors meld and makes it easier to slice.
    9. Low-Carb Option: Serve with cauliflower rice or a side salad for a complete low-carb meal.
    10. Garnish Fresh: Add fresh cilantro, lime wedges, or a dollop of guacamole just before serving for a burst of freshness.

With these tips, you’ll master this Chicken Fajita Casserole and make it your own.
