Keto Honey Mustard Pork Chops: Sweet, Tangy, and Sugar-Free! 🍖
Y'all, let me tell you about these Keto Honey Mustard Pork Chops that have completely transformed our weeknight dinner game! While I've been deep in my pumpkin spice obsession lately (hello, fall!), my husband Kevin keeps begging for more protein-packed dinners. And with beef prices sky-high these days, pork has become our budget-friendly best friend!
Kevin is a traditional "fry those chops in a pan" kind of guy, but I wanted something a bit more keto-friendly that would still make his taste buds dance. That's where this sugar-free honey mustard sauce comes in! It's the perfect balance of sweet and tangy, with fresh rosemary adding that gorgeous herby note that takes these chops from good to "Oh my goodness, I need seconds!"
Speaking of seconds - y'all, Kevin devoured TWO chops, half of mine, AND took the leftover one to work! For a man who usually gives me the side-eye when I make anything "keto" or "sugar-free," that's basically a standing ovation.
Over the years, I've created quite a few tasty pork recipes (like my Grilled Pork Chops with Peach Bourbon BBQ Sauce, Pork Tenderloin with Herb Mustard Sauce, and this amazing Pork Crown Roast), but these keto-friendly honey mustard pork chops might just be the new family favorite.
The best part? This recipe proves that going keto doesn't mean giving up those classic comfort food flavors. These tender, juicy pork chops with their rich, sugar-free honey mustard sauce will have everyone asking for seconds - whether they're following a keto diet or not!

🥘Keto Honey Mustard Pork Chops Ingredient Notes
Here, I explain the best ingredients for my Keto Honey Mustard Pork Chops recipe, what each one does, and substitution options. For the exact measurements, see the recipe card below.
- Center Cut Pork Loin Chops: Chosen for their perfect thickness and tenderness. Substitution: Bone-in chops work well too, but may need slightly longer cooking time.
- Whole Grain Mustard: Adds texture and deep mustard flavor to the coating. Substitution: Stoneground mustard can be used for similar results.
- Dijon Mustard: Creates a smooth, tangy base for the sauce. Substitution: Regular yellow mustard works but will give a different flavor profile.
- Sugar-Free Honey: Provides sweetness without the carbs. Substitution: Sugar-free maple syrup will work.
- Tamari: Adds depth and umami to the sauce. Substitution: Coconut aminos or regular soy sauce if not gluten-sensitive.
- Fresh Rosemary: Brings an aromatic, herby element to the dish. Substitution: Dried rosemary can be used (use 1/3 the amount).
- Olive Oil: Used for both cooking and sauce consistency. Substitution: Avocado oil works well too.
- Pink Salt: Enhances all the flavors. Substitution: Regular sea salt works as well.
- Fresh Garlic: Adds essential savory flavor to the sauce. Substitution: Garlic powder (1/4 teaspoon) can be used in a pinch.

💭My Recipe Tips
1. Perfect Your Pork Chops Pat your chops completely dry before seasoning - this ensures a beautiful sear. Let them come to room temperature for about 15 minutes before cooking for more even results.
2. Master the Sear Get your cast iron skillet nice and hot before adding the chops. Don't move them around once they hit the pan - let them develop that golden crust. You'll know they're ready to flip when they release easily from the pan.
3. Temperature is Everything Invest in a good meat thermometer! Pull the chops at 135°F - they'll reach the perfect 145°F during the resting period. This prevents dry, overcooked pork.
4. Don't Skip the Rest That 10-minute rest period is crucial! The meat continues cooking, and the juices are redistributed throughout the chop. Plus, the sauce thickens beautifully during this time.
5. Sauce Success When preparing the sugar-free honey mustard sauce, mix it thoroughly before pouring it over the chops. This ensures an even distribution of flavors and a consistent glaze.
6. Pan Positioning Place your cast iron skillet in the lower third of the oven. This helps prevent the top of the chops from drying out while ensuring they cook through evenly.
7. Spoon That Sauce Don't let any of that delicious sauce go to waste! Spoon it over the chops several times during the resting period - it will continue to thicken and create an amazing glaze.
FAQ about Keto Honey Mustard Pork Chops
The most common reason for tough pork chops is overcooking. Use a meat thermometer and remove them from the oven at 135°F - they'll reach the perfect 145°F while resting. Also, make sure you're letting them rest for the full 10 minutes to keep all those juices inside.
Look for chops that are about 1-inch thick. Thinner chops will cook too quickly and can dry out, while much thicker ones may need adjusted cooking times.
While these pork chops are best served fresh, you can prepare the mustard mixtures ahead of time. Store them separately in the refrigerator for up to 2 days before cooking.

I do not do enough with pork chops and pork tenderloin. I've been planning what to make for the blog over the next two months, and I very much want to correct the whole haven't-had-pork-in-freakin-forever thing.
Okay, how funny - my dad is the same as yours on the chicken issue. And for him it was turkey too. He would even complain about having to eat turkey at Thanksgiving! His objection to eating so much chicken was that live chickens "walk around in their own sh!t"! I don't know.... And that gene seems to have skipped my generation, I love chicken and turkey!
Your pork chops look so beautiful, I love that you used your cast iron!

I was just talking with Kevin last night about how I actually prefer pork over beef anymore! That is funny about our Dads being the same 🙂
So glad you like the chops and I adore my cast iron!! I need a bigger one, this is a 10" skillet.

are these bone in or boneless?
Bobbi | Bobbi's Kozy Kitchen
These are boneless, but you can use bone in if you prefer.

I’ve made the above recipe with pork and it was FANTASTIC! I also make it with chicken— I pan sear chicken tenderloins seasoned with S+P and set them aside, then mix the whole grain mustard and the sauce ingredients together. I heat the sauce in the skillet on low and add the tenderloins back in, turning to coat. Then I serve them and drizzle some more of the sauce on them.

This was easy and so delicious! My husband said it was "phenomenal!"
